I love finding new ways to use my homemade bisquick mix. It’s one of my favorite kitchen staples to keep on hand and makes so many recipes quick and easy.
Recipes like Apple Tart and Impossible Coconut Cake are staples for us, since I can throw them together in no time. And with our busy schedules these days, you need to be quick.
These 7UP cookies are another quick and easy recipe. They have an unusual mix of ingredients that turns into super soft, buttery, tender cookies that you’ll want to eat at every meal of the day.
What are 7UP biscuits?
If you love how easy it is to make bisquick biscuits, you will absolutely go crazy with these 7UP biscuits.
7UP Cookies are bisquick cookies taken to the next level. They only have 4 ingredients: one of them is 7UP, hence the name!
I can’t really tell you why this recipe works so well (it has to do with the carbonation of the soda), but I can tell you that these are some of the most delicious cookies I’ve had in a while.
I’ve seen some people compare them to KFC biscuits. It’s been a long time since I’ve had a KFC biscuit, but that’s a pretty good comparison from what I can remember.
They’re tender, buttery, and super light and airy. They would be amazing topped with sausage gravy, slathered in homemade butter and Raspberry Jamor alongside a bowl of corn chowder or beef and barley stew.

Ingredients you will need
To prepare these biscuits you will need:
- 4 tablespoons salted butter: Salted butter adds the best flavor to these cookies.
- 2 ½ cups Bisquick mix: You can use store-bought bisquick mix, but I always love using my homemade bisquick for recipes like this
- ½ cup sour cream: The sour cream makes these 7UP cookies slightly tangy and super tender.
- ½ cup 7UP or Sprite: Any clear carbonated soda will work for this recipe, so use your favorite brand.

These 7UP cookies are baked in an oven 8×8 inch pan. While the oven preheats to 425°F, add the butter to the pan and place it in the oven for a few minutes while it preheats, about 3 to 5 minutes.
Once the butter has melted, remove the pan from the oven and set it aside.
In a large bowl, add the sour cream to 2 ¼ cups of the bisquick mix. Use a pastry blender, a fork or even two knives, cut the sour cream into the bisquick. You want the sour cream to be well distributed and the mixture to be shaggy.
Stir the soda until well combined. The dough will be sticky!
Sprinkle the work surface with half of the remaining bisquick. Turn the dough out onto the counter and sprinkle the top of the dough with the rest of the baking mixture.
Use your hands to roll the dough out into a square about 6×6 inches. Use a floured dough blade, pizza cutter, or large knife to cut the dough into 9 squares.
Arrange the biscuits in the pan on top of the melted butter. Cook them for 15-16 minutes or until the surface is golden.
Storage and heating
7UP cookies are best the day they are made, but you can store them in an airtight container or zip-top bag at room temperature for 1-2 days.
If you want to reheat the cookies, I suggest wrapping them in foil and heating them in a toaster, air fryer, or oven on low for a few minutes.
If you want to freeze the biscuits, make the dough and cut it into squares. Arrange the biscuits on a baking tray lined with baking paper. Place the baking sheet in the freezer for 1-2 hours, until the cookies are completely frozen.
Store frozen cookies in a zip-top bag for up to a month. When you’re ready, cook them in the buttered pan according to the recipe directions, adding a few extra minutes of cooking time if necessary if you’re cooking them from frozen.
Frequent questions
Diet 7UP or Sprite will work with this recipe, but keep in mind that it will give the cookies a slightly different flavor. If you don’t mind, feel free to use it here.
Bisquick mix is a commonly available baking mix here in the United States. If you live in a place where you don’t have access to store-bought bisquick, I have a recipe for homemade bisquick that will work great in this recipe.
Once you’ve made your homemade bisquick, you can also use it in recipes like bisquick pancakes, bisquick waffles and simple blackberry tart.
YES! The cookies may spread a little more since they will have more room, so you may need to reduce the baking time by 1-2 minutes.
Of course you can. You can use a floured cookie cutter to cut the dough into 9 circles. Keep in mind that you will have to reroll and cut the scraps once or twice to get 9 cookies when you cut them into circles.

Place butter in an 8×8-inch pan. Place the baking sheet in the oven to melt the butter while the oven preheats, about 3-5 minutes. Be sure to remove the pan from the oven once the butter has melted so it doesn’t brown.

Sprinkle a clean work surface with half of the remaining baking mixture. Pour the dough onto the work surface and sprinkle the top of the dough with the remaining mixture.

Using your hands, roll the dough into a square about 6×6 inches. Use a floured dough knife, pizza cutter, or knife to cut the dough into 9 squares.

Arrange the dough squares in the pan over the melted butter. Bake at 425°F for 15-16 minutes, or until tops are golden brown.
