How to prepare Japanese potato salad?
First, peel and cut the potatoes into small pieces. Make sure you cut them about the same size, so they cook evenly. You can boil or steam them until soft and tender.
Secondly, gently mash the potatoes and leave a few bits for texture. Set aside to cool.
In the meantime, prepare the Persian cucumber and shallot slices by soaking them in salted water for a few minutes. Then drain them and squeeze them hard to remove excess water.
Finally, combine all the prepared vegetables and mock crab meat with Japanese mayonnaise and condensed milk, then add salt and ground black pepper to taste.

- To make creamy potato salad, cook or steam potatoes until soft and tender. However, we don’t want the potatoes to be overcooked, because they will be too moist and will fall apart easily.

- Soaking the cucumber and shallot slices in salted water will help remove the spiciness of the shallot (or onion) and make the cucumber crispier.
