We all know that scrambled eggs are easy, nutritious and quick and can definitely save the day on one of those SOS type nights where you're really struggling (lol pun intended) to get something on the table quickly. You can throw vegetables in there. Protein? I'm coming, I'm coming. Cheese? Yes, of course, why not.
So we wanted to take the vibe of that very regular, totally acceptable meal and make it a lot more fun. Because here we are in February, the longest and shortest month.
Light, puffy scrambled eggs, dotted with bits of bacon and spinach or whatever veggie/protein combo you love, some hashbrowns thrown in for good measure, and extra cheese making everything golden and crispy on top.
BUT IN WAFFLE FORM. WAFFLES!
You can throw them on sandwiches, cut them into strips for dippers, or, as we love to do, pile them skyward with delicious toppings. Goat cheese crumble, a drizzle of spicy romesco sauce, a spoonful of confit peppers and garlic, avocado for days, a sprinkle of chives because they're nice, maybe hot sauce because why stop now?

Ingredients you will need to prepare these egg waffles
These little fun makers can really be anything you want, but we like to be 100% maximalist – how much is too much – absolutely over the top with the toppings because this is an egg waffle party and we came to play.
So here's what you need to get started:
- egg
- frozen hashbrowns (or just a grated potato is fine)
- grated cheese
- garlic powder and salt
- cooked bacon or bacon or sausage (optional)
- spinach (optional, but why not add some greens?)
- cheddar cheese to put on top (for extra golden-brown-cheese stains. non-negotiable.)
Here's how we like to end:
- goat cheese
- confit peppers and garlic
- avocado
- romesco sauce (store-bought or homemade)
- chives
- spicy sauce!
See?! There are no withholdings. This is a stellar combination. BUT the great thing about an egg waffle party is that you make the guest list, so let your imagination run wild!

Mix the ingredients and prepare the waffle. That's really it.
But if you want some more guidance, here we are:
- Mix all the basic ingredients together.
- Deposit about 1/2-3/4 cup on a nonstick waffle maker (affiliate link). You may need a little cooking spray depending on the quality of the non-stick.
- Pieces of cheese. You really don't want to miss this. Tear off a couple of slices of cheese and place them on top before lowering the lid for a nice golden, cheesy surface. Cook until the light goes out and then make sure the potatoes are soft and the cheese is golden. (Usually just 1-2 minutes, but if it's not done yet, just turn it over and add an extra minute.)
- Top with all your toppings! And we mean everything. Good fun.

We promise you can't go wrong with a tower of toppings as directed. For example, CIAO garlic and pepper confit is basically garlic and peppers that have just been simmered in olive oil until they're soft as butter… why wouldn't you put that on EVERYTHING? Why turn away from this and all the other flavor explosions that abound?
But we promised that the beauty of these is how completely customizable they are. Swap the breakfast meat or vegetable combination as desired. Play with the seasonings to your liking. If you want a Tex-Mexy twist, add some black beans, pepperjack cheese, sour cream and salsa. A fun twist on broccoli cheddar with cooked rice instead of hash browns, broccoli bits, bacon and all the cheese. Maybe a caramelized onion version is in your future?

Egg Waffle Toppings:
- Prepare the pepper and garlic confit. Heat the olive oil in a pan over medium heat. Add the peppers and brown them until they are golden and very soft, stirring only occasionally to obtain a nice browning. I usually cook them for 20-30 minutes. In the last 10-15 minutes add the garlic with the peppers to make it nice and golden (just be careful not to burn it). In the last 5 minutes add the vinegar to add some zip and remove any browned bits from the bottom of the pan.
- Mix together the basic ingredients for your egg waffles.
- Pour approximately 1/2-3/4 cup onto a nonstick waffle maker (affiliate link) (depending on your size). I usually spray it with cooking spray, but that's not always necessary if the nonstick is really good.
- Place the cheese pieces on top and lower the lid. When the light goes off to signal cooking, check that the eggs are cooked, the vegetables are soft and the cheese is golden on the surface. Carefully remove to a plate. (Mine usually turns golden with soft greens in just 1-2 minutes, but if yours isn't done yet, flip it or wait another minute.)
- Top with all your toppings! I like goat cheese, confit peppers and garlic, romesco, avocado, chives and lots of salt and pepper. My girls like ketchup. We all win!

Store-bought romesco sauce: You can find ready-made romesco sauce at stores like Trader Joe's or Whole Foods. We've seen it in containers or bags on shelves. It will also sometimes be found near refrigerated sauces.
