Baked plantains stuffed with cheese are a delicious dish popular in Latin America. In Colombia we also like to add guava paste and it’s the perfect combination of sweet and savory.
Plantains are consumed throughout Colombia and South America. This delicious vegetable is versatile and can be cooked in many ways. You can bake, broil, broil and fry plantains. Green plantains are unripe (starchy and hard) while yellow plantains are ripe (soft and sweet). In Colombia we prepare savory and sweet dishes with plantains.
For this baked plantains recipe you should use very ripe plantains, because they are sweeter. Roasted plantains with sandwich and cheese prepare a delicious side dish or appetizer. Omit the guava paste for a classic roasted banana with cheese or baked plantains with cheese.
If I had to choose a recipe to make with ripe plantains, this will be number one on my list. I love the combination of the sweet guava paste with the cheese and the texture of the baked plantains is wonderful.

Plane trees: To prepare this recipe you need ripe plantains.
Butter: To cook plantains.
Guava paste: It is a paste made from guavas and sugar.
Cheese: I like to use mozzarella to make plantains with cheese and guava, but a hard white cheese like queso blanco will work.
How to prepare plantains with cheese and guava
Preheat the oven to 200°, cut the ends of the plantains and peel them.
Place them on a baking tray and brush them with butter, bake for 30-40 minutes.
Remove from the oven and slice the plantains lengthwise without reaching all the way to the bottom, stuff them with the guava paste and the cheese slices.
Return to the oven and cook another 10 minutes until the cheese melts and serve.
