Because our recipe
- One-pan dinner with easy cleanup, perfect for busy evenings!
- The simple Italian butter sauce imparts restaurant-quality flavor.
- Rich in colorful vegetables for a dinner that is as good for the eyes as it is for the rest of the body.
In this recipe I used five different colored vegetables. They all cook at about the same rate, so they’re a perfect match. Do you have a picky eater? You can always substitute vegetables based on your personal tastes. You can also keep the veggies separated on the baking sheet so it’s easy for that picky little eater to only get what they want.
Notes on ingredients
- Butter: It is the catalyst for flavour.
- Olive oil: Any neutral oil will work, but we recommend olive oil flavor.
Garlic: Fresh garlic adds the best flavor. If necessary, you can substitute 1/2 teaspoon of garlic powder per clove. - Italian seasoning: This is typically a blend of oregano, basil, thyme and rosemary. If you don’t have it, use a blend of any of these dried herbs.
- Cherry tomatoes: Keep them whole. You can also use cherry tomatoes, depending on what is available.
- Carrots: Cut carrots into 1/4-inch thick rounds. Make sure they are all uniform so they cook at the same rate.
- Red Pepper: Cut into 1-inch pieces. You can use any color peppers, but red adds a nice sweetness.
- Red Onion: Cut into 1-inch pieces, similar in size to the bell pepper, so they roast evenly.
- Broccoli florets: Cut the broccoli into small florets, about 1 to 1.5 inches in diameter. Make sure they are similar in size for even cooking.
- Sirloin steaks: Use steaks about 1 inch thick. Adjust cooking time slightly if steak is thicker or thinner to achieve desired doneness. You can also use a New York strip steak.
- Lemon: Zest the lemon before squeezing it. Lemon zest and juice add a bright, fresh flavor to the dish right before serving.
Using more than 2 steaks
If you need more than two steaks, simply add a couple more. This recipe can easily stretch to feed more people. For anything more than 4 steaks, though, you’ll want to double the butter sauce and vegetables and use an additional baking sheet to ensure everything cooks evenly.
Prepare the Vegetables
For best results, be sure to cut your vegetables as directed in the recipe. This ensures that they all cook evenly, so you don’t end up with a mix of undercooked or soggy veggies. Peppers and onions should be cut into 1-inch pieces, while carrots should be sliced into slices about 1/4 inch thick.
Cooking steak
Whether you like your steak practically raw on the plate or cooked all the way through, this steak doneness chart will help you. The chef’s standard is medium-rare: at this point the steak will be tender, juicy and delicious and will melt in your mouth. Keep in mind that cooking times may vary depending on the thickness of the steak.
- Rare: 125°F (cold red center)
- Medium Rare: 135°F (hot red center)
- Medium: 145°F (hot pink center)
- Medium well: 150°F (slightly pink center)
- Well done: 160°F (not pink, cooked)
Using a meat thermometer is the best way to ensure your steak reaches your desired level of doneness.
Instructions for storage and heating
Refrigerate: Store leftover steak and vegetables in an airtight container in the refrigerator for up to 3 days.
Reheat in the oven: Preheat oven to 350°F. Place steak and vegetables on a baking sheet and heat for about 10 minutes or until heated through.
Reheat in a pan: For a quick stovetop option, heat a skillet over medium heat. Add a small amount of oil and cook the steak and vegetables for about 5 minutes, stirring occasionally, until heated through.
