Patacones also known as Tostones are one of the most popular side dishes in Colombia and Latin America.
What are Patacones?
They are basically green plantains that have been fried, mashed, and then fried again in oil until crispy. In Colombia we serve them as a side dish or appetizer with different toppings and sauces.
I love traditional patacones, but I receive many requests from readers asking for a lighter version. I’ve tried several ways to make them without frying them in oil and I finally have a recipe I like. I really liked this baked version, they are crunchy and delicious.

Cooking spray: Use your favorite cooking spray to cook them.

How to Prepare Baked Pataconi
- Preheat oven to 400°F.
- Spray a baking sheet with cooking spray and set aside
- Cut off the end of each plantain and cut each plantain lengthwise on one side deep enough to cut through the skin but not the plantain.
- Place the plantains in a pan with enough water to cover them and cook for about 30 minutes or until they are soft.
- Remove the pan from the heat and remove one plantain at a time from the hot water (it is best to mash them while they are still hot). Peel the plantains and cut them into 4 thick slices while they are still hot.
- Flatten each slice as much as possible without breaking the piece, using a tostonera or the bottom of a glass. Place them on the baking sheet, add cooking spray over each piece and sprinkle them with salt. Cook for about 7-9 minutes or until golden and crispy. Turn the patacones and cook them on the other side for about 7 minutes. Season with more salt and serve with your favorite dressing.
What to serve with Patacones
They can be served as a side dish for seafood, meat and poultry. Also as an appetizer with dips such as hogao, guacamole and garlic sauce.
