This is my new nostalgia and well-being cake!
1 cup yogurt
3/4 cup olive or sunflower oil
3 eggs
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon of salt
1 cup feta/white cheese
1/2 cup grated mozzarella
1 cup pitted and chopped black olives
1/2 or more chopped parsley
2-3 tablespoons of sesame seeds
2-3 tablespoons of nigella seeds
-Beat eggs, oil and yogurt together.
-Add 2 or 3 parts of flour together with the salt and yeast. Mix and make sure no lumps remain.
-Add the feta/white cheese, parsley, olives and half the mozzarella.
-Pour batter into a greased or lined 9-inch cake pan or square.
-Sprinkle the rest of the mozzarella on top. Sprinkle generously with sesame seeds and/or nigella.
-Bake in a preheated oven at 180-180°C for 50-60 minutes or until a knife inserted into the center comes out clean.
-Let it rest for 15 minutes on a wire rack to cool and then nibble.
