What is Karaage?
Karaage (唐揚げ) is Japanese fried chicken in which small pieces of chicken are marinated and then fried until crispy.
Karaage is a very popular item in Japanese restaurants here in the United States. It is often served as an appetizer or as part of a Japanese combination or bento meal, it is also called sesame fried chicken.

How to do Karaage
- Use chicken thighs or drumsticks for the best chicken karaage. Cut the chicken into small pieces.
- Marinate the chicken with soy sauce, Japanese cooking sake, ginger, garlic and sesame oil for just 15 minutes.
- Generously coat each piece of chicken with potato starch or cornstarch.
- Fry the chicken. They should be golden on the outside but the meat should be juicy and full of flavour.
The secret of good Karaage
For the best karaage recipe, you should marinate the chicken for at least 2 hours or better overnight so that the flavors penetrate inside the chicken meat.
Serve the chicken with mayonnaise and lemon wedges. Squeeze lemon juice over the karaage and dip it in mayonnaise.

Chicken Karaage (sesame fried chicken)
Chicken Karaage – Crispy Sesame Japanese Fried Chicken, the best chicken karaage recipe that is better than Japanese restaurants.

Use paper towels to pat dry the chicken and transfer to a bowl. Add sake, soy sauce, ginger juice, sesame oil and marinate for 30 minutes, preferably 2 hours. Transfer the chicken pieces from the marinade, and coat them evenly with the cornstarch, to a plastic bag such as Ziplock. Remove excess corn starch.

Heat a wok/pot of cooking oil. When cooking oil is hot enough for frying 350°F-375°F (176°C-190°C), dip the chicken in the oil and fry it quickly until it floats. Transfer them to a plate and wait a couple of minutes.

Return the chicken to the oil and fry again until golden and crispy. Serve on a plate or in a bowl lined with absorbent paper to absorb excess oil, serve hot with a slice of lemon and mayonnaise.
