- 12-ounce steak (flank, sirloin, or ribeye)
- 2 medium sweet potatoes, cut into chips
- 4 cups mixed greens or arugula
- 1/4 cup cherry tomatoes, cut in half

For the balsamic vinaigrette
- 1/4 cup balsamic vinegar
- 2 tablespoons of olive oil

- Spread in a single layer on the baking sheet and bake for 20-25 minutes, turning halfway through, until crisp.
Step 2: Cook the steak
- Season the steak generously with salt and pepper.
- Heat a pan over medium-high heat with a drizzle of olive oil.
- Sear the steak for 3-4 minutes per side for medium-rare, or cook it to your preferred doneness.
- Let the steak rest for 5 minutes, then slice thinly against the grain.

- Heat grill to high.
- For a medium-rare temperature on a 1 ½-inch steak rack for 3 minutes on the first side and 3 to 5 minutes on the second side.

Steak and Sweet Potato Power Bowl

Steak

Rub the steak with salt and pepper.

Place it in a shallow glass dish (or plastic bag).

Add oil and balsamic vinegar.

Toss to coat and let marinate for about 2 hours. The steak should sit at room temperature for at least an hour before grilling.

Grill the steak or brown it in a pan.
Sweet potatoes

While steak is marinating, preheat oven to 425℉

Cut the sweet potatoes into french fries.

Place on a parchment-lined baking sheet.

Toss with oil, salt and seasoning, toss to coat.

Spread evenly on the baking sheet.

Roast for about 15-20 minutes. Until they are tender and golden.
Balsamic vinaigrette

Add salt, pepper and mustard to a bowl. Whisk to combine

Add crushed garlic and/or 1 tablespoon chopped shallot (optional).

Add balsamic vinegar and honey or maple syrup (if using). Whisk together.

Slowly add the oil while continuing to blend.
If you’re using a sous vide, follow the manufacturer’s instructions for setting up the water bath and setting the times for the thickness and doneness of the steak.
Grill:
To finish a sous vide steak on the grill, simply grill it over high heat for 2 minutes on each side.
To grill a steak if you are NOT using sous vide cooking. Grill on top.
Make sure the steak is at room temperature before placing it on the grill.
Grill time it will depend on the thickness of your steak.
Let the steak rest for 10 minutes after removing it from the grill. Cover it with cling film and let it rest at room temperature for 10 minutes.
Pan searing:
To finish a sous vide steak in a pan, you will only need to sear it in the pan for 2 minutes on each side. I usually use butter in the pan.
If you do NOT use sous vide cooking, brown the steak in a pan. Brown on high.
Make sure the steak is at room temperature before pan-searing.
The cooking time will depend on the thickness of the steak.
Let the steak rest for 10 minutes after it comes out of the pan. Cover it with cling film and let it rest at room temperature for 10 minutes.
