Preheat the oven to 200°C (400°F).
Prepare the marinade: Whisk together olive oil, lemon juice, oregano, garlic, salt and pepper.
Marinate the chicken: Place the chicken pieces in a large baking dish and pour half the marinade over them, coating them evenly.
Add the potatoes: Arrange the quartered potatoes around the chicken and drizzle with the remaining marinade.
Add broth: Pour chicken broth or water into the pan.
Roast: Place pan in preheated oven for 60-75 minutes, until chicken is browned and potatoes are tender. Butter every 20-30 minutes with cooking juices.
Finish and serve: Remove from the oven, let rest for a few minutes and garnish with fresh herbs if desired.
