What is coffee caviar?

Caviar is nothing more than turning liquids into solids using the method of molecular gastronomy. Coffee caviar is made by turning black coffee into a small spherical shape. To make it, use simple ingredients such as cold oil and agar agar. Usually caviar is produced using sodium alginate and calcium chloride. But this is done using agar agar and cold oil.

Coffee caviar adds a nice touch to this plated desert. It looks nice and adds balance and burst of coffee flavor. It is nothing more than sweetened black coffee thickened with an agar agar mixture. This is then poured into a dropper and transformed into caviar by dropping it into cold oil. It’s a fun process and in this same recipe, instead of coffee, you can use any fruit juice.

Making it was a lot of fun and not difficult at all! And it’s not just aesthetic, it’s tasty too! I made this caviar act as a component with mine mocha paradise desert. I really loved the balance that the caviar brought to the entire dessert.

The caviar itself was not sweet at all. When you spooned it it added a burst of coffee flavor.

Coffee caviar ingredients

Black coffee – I used a strong cup of black (American) coffee to make this coffee caviar. You can use instant coffee powder and mix it with water too. Instead of coffee you can also use fruit juice.

Sugar – a small touch of sugar is added to sweeten the coffee.

Jelly – agar agar is the important ingredient in the preparation of coffee caviar. Agar agar is mixed with fruit juice or black coffee and poured into a dropper bottle. When we put the liquid into cold oil, it takes on a spherical shape.

Oil – I used neutral tasting oil such as refined oil or sunflower oil. Some other oils freeze at low temperatures, such as coconut oil, which is not recommended.

Caviar using molecular gastronomy

250 g of fruit juice, 2 g of sodium alginate, 500 g of water, 2.5 g of calcium chloride

  1. Mix the alginate with the fruit juice.
  2. Dissolve calcium chloride in water.
  3. Drop the calcium chloride juice solution droplets into the water.
  4. Use a filter to remove droplets from the calcium chloride bath after 1-2 minutes in a separate cold water bath.

For a better result of coffee caviar

  1. Use a tall glass of oil to pour in the caviar mixture.
  2. To make it, use very cold oil.
  3. Don’t use oil that can harden in the refrigerator like coconut oil.
  4. Use an oil that doesn’t have much flavor on its own.
  5. Instead of coffee you can use honey, fruit juice or vegetable juices.

How to prepare coffee caviar (step by step images)

Pre-Preparation

1)To prepare coffee caviar you need agar agar powder. I have been using this brand every time and it works great.

2)The day before preparing the coffee caviar, put the neutral-flavored oil in a jug and place it in the freezer. The oil must be very cold.

Make a coffee caviar mix

3)Take black coffee in a saucepan. You can mix instant coffee powder with a little water or brew fresh black coffee. Make sure the coffee is fresh.

4)Add the sugar to the black coffee and mix well.

5) Sprinkle some agar agar powder into the black coffee mixture. Let sit for 10 minutes for the agar agar to bloom.

Reheat the coffee

6)Place the coffee mixture on the stove and cook over medium-low heat until the agar agar melts. Continue whisking the entire time.

7)The coffee mixture will thicken during cooking.

8) Take the cold oil from the freezer. Pour the coffee agar agar mixture into a dropper.

9)Now gently dip the coffee agar agar mixture into the cold oil. As it sinks into the oil, it will set and form a small caviar-like shape.

10) Do it with patience. Make sure you release one at a time.

11)Now you can see that the coffee caviar is well set.

12) Filter the coffee caviar in a strainer. Rinse the coffee caviar under cold water once to remove excess oil.

  • Use the syrup immediately. if you let it cool, it may harden.
  • You can reheat it gently if the mixture hardens.

  • This can be stored in the refrigerator for up to a week.
