If you love banana, you will love this recipe! The peanut butter makes this granola a complete meal, giving it an amazing texture: I can’t describe it, you have to try it! The maple syrup adds just the right amount of sweetness, turning this recipe into a dessert.

📃Ingredients and substitutions
Banana. For a sweeter granola, use an extra ripe banana.
Peanut butter. Use one with no added sugar for a refined sugar-free version. You can use a sweetened peanut butter or replace it with almond butter.
Oats. Here I use both rolled oats and quick oats. Mixing both gives a better texture than using just quick oats or rolled oats, but you can stick with just rolled oats.
Banana chips. Add this ingredient only after the granola is cooked and cooled.
🥣How to do it
Granola is easy to prepare, but for beginners it can be a little complicated! Let’s go over all the steps together to get the best banana granola ever.
- Start by preheating the oven. The granola will cook better and evenly if you preheat the oven.
- Take 2 bowls. In one mix all the dry ingredients, in the other the wet ones. Combine both and mix until everything is well combined.
- Spread the granola onto a lined baking tray. Don’t make a layer too thick otherwise it will be less crunchy. Aim for an even layer.
- Check your granola before the time runs out. Every oven is different, so I recommend checking your granola after 25 minutes. If it darkens too much around the edges, lower the temperature a bit or move it to a higher rack.
✔️Advice from the experts
- For a sweeter granola, use an extra ripe banana (the ones with dark spots are the best!). The riper it is, the sweeter your granola will be.
- Look for big granola clustersdo not mix it during cooking and let it cool completely before breaking it into pieces.
- To make this granola extremely crunchy, spread it well on the baking tray so that it dries more. You can also leave the pan inside the oven for another 20 minutes after turning it off (just make sure the door is half open).
- I don’t recommend using just quick oats for this recipe, as the texture will change too much and you risk not getting a crunchy granola.
- You can replace the maple syrup with honey or you can use my vegan honey.
- Banana chips are optional, but they make this granola even more delicious! If they are too large, crunch them a bit and add them only after cooking, when you store the granola.
- Don’t skip the baking paper. It makes it easier to clean the pan after cooking and prevents the granola from getting too dark on the bottom.
🧇How to obtain large bunches
- You have to Press the granola down when placing it on the baking sheet. Do this with a spoon or your fingers;
- Let the granola cook without throwing it away! Don’t worry, it won’t burn if cooked at the right temperature;
- Be patient and let it cool completely before dividing it into bunches. If you do this while the granola is still warm, you risk losing all the big clumps of granola.
🫙Store and freeze
Store your granola in an airtight container, at room temperature. It will be good for 2 or 3 weeks.
You can freeze this recipe. To do this, wait until it cools completely, then place it in a freezer bag and store it in the freezer. It’s good for about 3 months.

Banana bread granola
Are you looking for a recipe for a healthy breakfast that tastes sweet? Banana bread granola might be just what you need! Vegan, gluten-free and naturally sweetened, this recipe will make your first meal delicious.

Preheat oven to 300°F. Line a rectangular baking tray with baking paper or use a silicone mat.

In a medium bowl, mash the banana. Add the peanut butter, almond oil and maple syrup and mix until smooth.

In a large bowl, add the rolled oats, almonds, salt, and cinnamon and stir to combine.

Add the banana mixture to the oat mixture and mix until smooth.

Spread the granola into an even layer on a lined baking sheet. Don't make a layer too thick otherwise it will become less crunchy.

Bake for 25-30 minutes, until the granola is lightly golden on the surface.
Once ready, turn off the oven and leave the granola inside for another 20 minutes (see notes). -
Allow the granola to cool before adding the banana chips and breaking it up. Store in an airtight container at room temperature.
Notes
Don't just use quick oats, or the texture will change dramatically.
If you're worried about the granola burning (after turning off the oven), leave the oven door ajar and check it every 5 minutes.
It's important to use a ripe banana, otherwise your granola won't be as sweet.
If you want crunchier granola, roll it out in a thinner layer. The thinner it becomes, the crispier it becomes, as the pieces dry out more.
If you live in a warmer country or cook it in the summer, I recommend storing it in the refrigerator, otherwise the granola may deteriorate faster.
