How to Make Apple Pie in a Jar
Prepare the dough: Place the almond flour, egg yolk, coconut oil and honey in a food processor and process for 30 to 60 seconds until a soft dough forms with no more dry ingredients. Divide the crust dough into four balls and freeze for 20 minutes.
Prepare the filling: Melt the coconut oil over medium heat. Add the apples, honey and lemon juice. Cook until the apples are soft (about five to ten minutes). Add the cinnamon and lemon zest and cook for another minute.
Fill the jars: Roll out the cold dough balls into four circles. Use a cookie cutter to cut some holes. Fill the jar with the apple filling until it is about two-thirds full. Cover with a circle of dough and cook for 20 minutes. Leave to cool to room temperature, garnish with coconut cream and serve.
Starting and heating instructions:
To move forward: You can make the jars of apple pie ahead of time and freeze them, just make sure the filling doesn’t reach about two-thirds of the way up the jar to prevent it from breaking. Store the dough separately by wrapping it in cling film before freezing. You can separate the dough circles with wax paper to prevent them from sticking together.
To heat: Once you’re ready to make the apple pie jars, take out the dough and the frozen jars. Fill the jars with the frozen dough and start baking. Keep in mind that it will take a few extra minutes since you will be cooking from frozen. If the surface browns before the jar has heated up, cover it with a little foil and continue cooking.
