How to make this easy cashew chicken
Cut the chicken breast into small pieces and season them with salt and pepper. Transfer the chicken to a bowl and add the cornstarch, tossing to coat evenly.
In a small bowl, combine soy sauce, vegetable broth, sugar, garlic, brown sugar, hoisin sauce, and sesame oil. Mix well and set aside.
Heat 1 tablespoon oil in a large skillet over medium-high heat. Add half of the chicken pieces in a single layer and cook until lightly browned on one side, about 1-2 minutes. Turn the chicken and cook for another 1-2 minutes. Remove the chicken to a clean plate and repeat with the remaining chicken.
Return the first batch of chicken to the pan. Add the green onion, cashews, and prepared soy sauce mixture. Cook for a further 2 minutes until the sauce thickens.

For the chicken
- 1 ¼ pound (650 g) boneless, skinless chicken breast
- salt and freshly ground black pepper
- 1/3 cup (40 g) corn starch
- 2 table spoon (30 g) vegetable oil
For the sauce
- 1/4 cup (70 g) soy sauce
- 2/3 cup (160 ml) vegetable broth or water
- 4 garlic cloves chopped
- 2 table spoon (30 g) hoisin sauce
- 1 table spoon (15 g) brown sugar
- 2 table spoon (30 g) rice vinegar
- 1 teaspoon (5 g) sesame oil
For garnish
- 1 cup (150 g) roasted cashews
- 6 green onions chopped
Instructions

Cut the chicken breast into small pieces. Season with salt and pepper and transfer them to a bowl.

Add the cornstarch and stir to coat evenly.

In a small bowl add the soy sauce, vegetable broth, sugar, garlic, brown sugar, hoisin sauce and sesame oil. Stir to combine. Set aside until ready to use.

In a large skillet, heat 1 tablespoon oil over medium-high heat. Add half of the chicken pieces in a single layer. Cook until the chicken is lightly browned on one side, about 1 to 2 minutes. Turn to the other side and cook for another 1-2 minutes.
