Refreshing Lentil Salad Recipe

Ingredients: 2 cups cooked green lentils 3 tablespoons chopped red onions 3 tablespoons chopped jalapenos with seeds 2 tablespoons olive oil 3 teaspoons ground mustard 3 tablespoons lemon juice Salt to taste

Instructions:

Heat the olive oil in a pan over medium heat. Add the onions and brown them for about two minutes. Add the jalapenos and continue to sauté for another minute, stirring occasionally. Season with salt. Turn off the heat and let the pan cool.

In a medium bowl add the cooked lentils. Lightly mash some lentils with a fork (optional). Sprinkle the mustard over the top and mix. Add all other ingredients, including the sauteed onions and jalapenos, and combine. Add salt to taste.

Tip:

The traditional way of cooking lentils for this salad will result in a very soft lentil. Cook in your likeness of tenderness.

Note:

Brown lentils can be used instead of green lentils.
