What is sirloin?

Sirloin is a cut of steak that comes from the back of the cow, between the short and round loin. This area gets moderate exercise, resulting in a leaner and less tender steak than cuts like ribeye or filet mignon, but still flavorful and juicy when cooked properly. Using my two zone grilling method, you will get a perfectly cooked, tender and juicy steak.

Choose the right sirloin

When selecting sirloin steaks, look for cuts with a deep red color and uniform marbling of white fat throughout the meat. This marbling helps keep the steak moist and flavorful while cooking. If you want the best results on the grill, choose thicker steaks at least 1 to 1 1/2 inches thick.

Simple steak seasoning

You want to be sure to season your sirloin steaks with the right mixture, because this is the key to bringing out their natural flavor and creating a delicious crust on the grill. This simple blend of seasonings pairs perfectly with the strong flavor of the sirloin:

  • 2 teaspoons black pepper
  • 2 teaspoons Kosher salt
  • 1 Teaspoon ground coriander
  • 1 Teaspoon garlic powder
  • 1 Teaspoon onion powder
  • 1/2 tsp Cayenne pepper

Sirloin is an affordable cut that you can turn into something from the finest steakhouse when you grill it with my method. Here are some other ways to get the most out of this versatile cut.

  • I stay ahead. Remove the steaks from the refrigerator ahead of time and let them come to room temperature. This will help them cook more evenly.
  • Clean the grill. If you want to get the coveted grill marks, you need to work with a clean grill. If you need help, check out my guide on cleaning a charcoal grill.
  • Rest afterwards. Once again, you need to rest the steaks just like you did before grilling them. Letting the fillets rest for 5 to 10 minutes after grilling will make slicing them easier and ensure all the juicy beef flavor remains in the meat.

How long to grill sirloin

We grill your sirloin steaks in two stages using my two-zone grilling method. We’ll first leave our steaks for about 40 minutes on indirect heat, then transfer them to the direct heat side for a final seal. The overall process should take about 45 minutes, but can vary greatly depending on the cut of meat and your grill. Always use a reliable meat thermometer, like mine Thermapen ONE, to ensure your steaks are cooked to perfection. Here are the target internal temperatures for various doneness levels:

  • Rare: 125 degrees F
  • Medium rare: 135 degrees F
  • Medium: 145 degrees F
  • Average Good: 155 degrees F
  • Well done: 160 degrees F

How to prepare grilled beef steak

It’s time to fire up the grill and put those tasty sirloins on the grill. Here’s how to make perfect sirloin steaks every time, with these simple steps:

  1. Prepare the dressing. Let the sirloin steaks rest a few minutes before seasoning and grilling. Take this time to set up the grill for dual zone cooking and season the steak. Combine all the dressing ingredients in a small bowl and then whisk them together. Use a fork to avoid any lumps. Once the seasoning is mixed, season your sirloins on all sides.
  2. Grilled sirloin steaks. When the grill is at the right temperature, it’s time to put on the sirloins. First, you’ll leave your steaks for about 40 minutes on the indirect heat side of the grill, turning them once in between. This period of indirect heat allows the goodness of the smoke to melt the fat in the sirloins, releasing all that delicious beef flavor.
  3. Sear your sirloins. When your steaks have about 10 degrees left to reach your desired doneness, you’ll want to bring them to the direct heat side of the grill. 2-3 minutes per side over direct heat will give your sirloins a nice brown, ensuring a light crust that holds all the tender juiciness.
  4. Rest, serve and enjoy. Remove steaks to serving platter and let rest for 5 to 10 minutes. This resting time is crucial for the juicy flavor inside to stabilize, allowing for perfect slices.

What to serve with the sirloin

  • Grilled sirloin steaks. Place the steaks on the grills over indirect heat, close the lid and cook for about 20 minutes, then turn them once. Cook an additional 20 minutes or until steaks are 10 degrees from target temperature.

  • Sear your sirloins. Transfer the steaks to the direct-heat side of the grill to sear for 2 to 3 minutes per side or until the steaks have a nice crust and reach the desired internal temperature.

  • Rest, serve and enjoy. Remove the steaks to a serving platter and let rest for 5-10 minutes before slicing and serving.
