  • 3 baked potatoes

  • ¾ cup – 1 cup low-fat cottage cheese, divided (¼ cup per potato)
  • 1 tablespoon

Instructions:

  1. Preheat oven to 400. Line a baking sheet with baking paper.
  2. Using a fork, poke holes in all three potatoes. This will help them soften while cooking. Place the potatoes on the baking sheet and bake for at least 40 minutes or until a knife can cut through.
