This steak marinade is the perfect marinade for any steak you plan to grill or smoke. It infuses the meat with a classic steak flavor that pairs beautifully with the richness of the meat. If you’re looking for a nice, well-rounded marinade for your steak, then this is the real winner.

The best marinated steak

I’m not kidding when I say this is the best steak marinade. This marinade goes with everything from flank steak to skirt steak and even rib eye steak. Whatever steak you plan to grill, this marinade will be there to add amazing flavor. Many steak marinades are overpowering and cover up the robust flavor of the steak, but this one enhances the flavor of the meat while tenderizing it and making cooking the steak a breeze.

Like all good marinades, it contains 5 key elements that ensure your meat turns out tender, juicy and tastes absolutely amazing:

  • Fat. Fat prevents acid from breaking down meat proteins.
  • Acid. Adding acid helps tenderize the meat.
  • Sugar. The sugar balances the flavors of the marinade.
  • Salt. Including salt adds a flavorful element to your marinade.
  • Herbs and spices. This addition gives the marinade a unique flavor profile.

This marinade is packed with umami richness. The red wine vinegar is light and fresh, the Worcestershire sauce was practically created to accompany beef, and the fresh thyme and minced garlic are always delicious when paired with rich beef. Honey brings a sweet element to the marinade to balance the flavor, while olive oil provides much-needed fat for flavor.

Should You Marinate Steak?

While you don’t need to marinate your steak, the marinade is extremely useful for adding flavor and tenderness to some cheaper cuts of steak. If you’re looking for a way to add flavors that you couldn’t get with a dry seasoning, then you should marinate your steak. Liquid seasonings like soy sauce, citrus juices, and vinegar are great flavors to add to rich steak that you can only use in a wet marinade.

This marinade has been prepared to accompany many cuts of beef. I recommend you turn yours on favorite grill and trying this marinade on your flank, flap or skirt steak. It’s also great with round steaks (London grill), sirloin steaks and my new favorite, chuck eye steak. Chuck Eye steaks are often referred to as “poor man’s ribeye” and are arriving in more grocery stores lately. I recommend avoiding more expensive cuts like ribeyes, New York, and filets when using this marinade.

Ingredients for Quick Steak Marinade

This quick steak marinade contains just 9 ingredients, many of which you probably have in your pantry. Talk about an easy dinner option. The ingredients in this marinade help tenderize the meat, add additional fat and salt, and of course, introduce great flavor to the steak thanks to the fresh herbs, garlic, and seasonings.

Here’s what you’ll need to gather and then you’ll be ready to make this steak marinade:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup Honey
  • 2 tbsp Worcestershire sauce
  • 1 1/2 tsp black pepper
  • 1 1/2 tsp salt
  • 5 sprigs Fresh thyme
  • 5 cloves minced garlic
  • 1 Teaspoon chili pepper pieces

How to Marinate Steak

Marinating steak is a simple process that produces delicious results. Follow these steps and you will get perfectly marinated steaks:

  1. Prepare the marinade. In a bowl, whisk together the olive oil, red wine vinegar, honey, Worcestershire sauce, black pepper, salt, thyme leaves, minced garlic, and red pepper flakes until combined. well blended.
  2. Mix and massage. Place the steaks in a zip-top bag or nonreactive glass container, then pour the marinade over the steaks. Then, massage or stir to ensure the meat is evenly coated on all sides.
  3. Marinated steaks. Place the marinated steaks in the refrigerator and let them marinate for at least 4 to 8 hours. This marinade will cover about 1 pound of steak, so if you have larger quantities of steak, double or triple the recipe.
  4. Grill. After marinating, remove the steaks from the marinade and discard any remaining liquid. Grill the steaks over high heat until desired doneness, letting them rest for a few minutes before slicing and serving.

Quick note: This marinade will cover about a pound of steak, so if you have a larger amount of steak to marinate, you’ll need to double or triple the recipe.

How long should I marinate the steak?

I recommend marinating the steak for at least 4 hours to allow all the flavor to coat and penetrate the meat well. You can marinate this steak for up to 8 hours. I generally avoid marinating steaks for more than 8 hours. If the marinade contains a lot of acidic elements, these can change the texture of the steak by destroying the protein structures within the meat, and marinating for more than 8 hours can make the meat mealy, mealy and dry.

A quick rule of thumb is that if you have thinner cuts of steak, opt to marinate them for a shorter period of time. Thinner steaks can marinate rather quickly, but I typically plan on at LEAST 1 hour (but 3-4 hours will produce better flavor). For thicker steaks, 4-8 hours is common practice. The longer the steak sits in the marinade, the stronger the flavor will become.

  • Grill. Remove steaks from marinade and grill to desired doneness.
