Vegetarian corned beef hash

Corned Beef Hash is a chopped meat and vegetable dish with potatoes that cooks on the stove in a skillet. It's a great meal if you have leftover meat or vegetables because you can add almost anything to it. Corned Beef Hash is one of the most popular types of hash and a great way to use up leftover corned beef. What exactly is corned beef?

Corned meat: Two cups lean corned beef cooked and finely chopped (trim off fat before cooking)
Vegetables: Onion, Yukon Gold potatoes, carrots, green peppers
Spices: Salt, pepper, garlic powder, paprika

How to Make Corned Beef Hash

Once the vegetables are prepped, this hash cooks quickly.

  1. Fry the onion, pepper and carrots until tender.
  2. Add the potatoes and season with salt, garlic powder, paprika and black pepper.
  3. Cover and cook until golden brown about five to seven minutes
  4. Add the corned beef and press into a single layer. Cook uncovered until the bottom is golden. Season with more salt if necessary.

What to Serve with Corned Beef Hash

I like to eat my hash with 2 fried or poached eggs for breakfast because I like runny yolks. Feel the frying to cook your eggs the way you like them. You can also serve it with a slice of wholemeal toast or a side of fresh fruit. If you serve hash for dinner, it's perfect with a side salad.

Variations:

  • Swap the corned beef for leftover turkey or chicken.
  • Sub-rust or canned potatoes for Yukon potatoes.
  • Use a red pepper instead of a green one.

  • Heat the oil in a non-stick pan over medium heat.

  • Add the onion, pepper and carrots and cook for 5 minutes, until the onions are translucent and the vegetables are tender.

  • Add the potatoes, season with salt, garlic powder, paprika and black pepper.

  • Cover and cook until golden, stirring, about 5-7 minutes.

  • Add the corned beef and press so that it is in a single layer and continue to cook uncovered until the bottom is nicely browned, stirring after a few minutes.

  • Add salt to taste.

  • Serve with fried or poached eggs for breakfast.
