Delmonico Steak

Imagine biting into a thick slice of perfectly grilled steak, full of herb and garlic flavor that’s totally unique. Now stop imagining (and drooling) and listen. My Delmonico Steaks with Garlic Thyme Marinade are exactly that. I’ve discovered the mystery behind this elusive grillable cut of beef old New York steakhousesteak style, right in your backyard.

I have a garlic and thyme marinade to give a depth of herbaceous flavor to your tasty Delmonico steaks before grilling them to perfection and then searing them over high heat. If you’re ready to spoil yourself for more steaks, fire up the grill and let’s get started.

What cut is a Delmonico steak?

While there is some confusion online about what the Delmonico cut is, I can assure you that I have the truth for you. I thought Delmonico was a chuck steak. After receiving what appeared to be a Denver steak labeled as Delmonico from the grocery store, we decided to look into it further. Some internet searches created even more confusion, we decided to go straight to the source and called the world famous Delmonico Steakhouseand to our surprise they confirmed that it is indeed a chuck eye steak.

This means that the Delmonico steak is a tender, well-marbled cut of beef that comes from the chuck eye. This is the opposite end of the same primary cut from which the ribs are obtained. This cut is known for its unmistakably rich, juicy flavor and tender texture. Whether you call it Chuck Eye or Delmonico steak, you’re in for the kind of steak most people only dream about.

Marinated steak

A flavorful marinade is the key to taking your Delmonico steak from delicious to incredible. My simple combination of herbs, spices and more infuses your steaks with mouthwatering flavor all the way through. Here’s what you’ll need:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup Honey
  • 2 tbsp Worcestershire sauce
  • 1 1/2 tsp black pepper
  • 1 1/2 tsp Kosher salt
  • 1 Teaspoon chili pepper pieces
  • 5 sprigs Fresh thyme
  • 5 cloves chopped garlic

Combine your ingredients into a gallon zipper bag, then place the steaks inside and seal. Be sure to massage the marinade into the steaks so they can soak up as much of the herby, garlicky goodness as possible. When you’re done, place the steaks in the refrigerator for 4 hours. If you have a very thick cut, you can take 6-8 hours.

How long to grill steak

When it comes to grilling steak, I love using the two-zone grilling method. By setting your grill to high heat on one side and indirect heat on the other, you have the perfect way to cook steaks. You will need an overall temperature of about 450 degrees F. First, you will leave your steaks 3-4 minutes per side on the direct heat side of the grill with the lid open to develop a nice crispy browning.

Then, you’ll move your tender Delmonico steaks to the indirect heat side of the grill and give them 20 minutes before turning them for another 20 minutes. Please note that times are estimates as temperatures vary greatly between different grills and cuts of meat. Always use a reliable meat thermometer, like mine Thermapen ONEand follow the cooking guidelines below.

  • Rare: 125 degrees F
  • Medium rare: 135 degrees F
  • Medium: 145 degrees F
  • Average Good: 155 degrees F
  • Well done: 160 degrees F

How to Prepare Delmonico Steak

Grilling perfect Delmonico steaks is all about technique. You’ve infused your steaks with all kinds of flavorful herbs and spices, and now it’s time to use the two-zone grill to cook them to perfection:

  1. Prepare the marinade. Get a gallon zipper bag and then add all the olive oil, red wine vinegar, honey, Worcestershire sauce, salt, pepper, red pepper flakes, fresh thyme and minced garlic. Then, place the steaks in the marinade and massage or toss the steak to ensure an even coating on all sides.
  2. Marinated steaks. Place the marinade bag in the refrigerator and let the steak marinate for 4 to 8 hours. If you prefer, you can let thicker cuts marinate for 6-8 hours, but 4 hours is plenty for most steaks.
  3. Sear the steaks. Preheat the grill for dual-zone grilling to an overall temperature of about 450 degrees F. Remove the steaks from the bag and carefully shake off any excess marinade or large pieces of herbs. Place the steaks on the side of the grill over high heat and cook for 3-4 minutes per side with the lid open. This will give you that nice browning on the outside of your steaks.
  4. Finish grilling. Once both sides are nicely browned, move the steaks to the indirect heat side of the grill and close the lid. You want to give your steaks about 3-4 minutes per side. You can remove them when your steaks reach the desired level of doneness by reading on a reliable instant read thermometer. A medium rare steak should come to temperature in about 6 to 8 minutes.
  5. Rest and serve. Remove the steaks to a cutting board or serving platter, then let them rest for 5 to 10 minutes. Once all that tender, juicy goodness has settled, you can slice up the steaks and serve them with your favorite sides.

What to serve with Delmonico steak

These Delmonico steaks are so full of unique, rich, beefy flavor that you can serve them on their own and wow your guests. But where’s the fun in that? You can go with traditional steak sides like mashed potatoes and you’re in for a killer meal.   • Marinated steaks. Place the steak in the marinade and rub or toss the steak to make sure it is evenly coated on all sides. Place the bag or container of steak in the refrigerator and let the steak marinate for 4 to 8 hours. Smaller steaks can marinate for 4 hours, thicker cuts can marinate for 6-8 hours.

  • Sear the steaks. Preheat grill to medium-high heat (about 450 degrees F) for dual-zone cooking (one side with high heat, one side with little to no heat). Remove the steaks from the bag and carefully shake off any excess marinade or large pieces of herbs. Place the steaks on the side of the grill over high heat and cook for 3-4 minutes per side, leaving the lid open.

  • Finish grilling. Once both sides are nicely browned, move the steaks to the low heat side of the grill, close the lid and cook to desired doneness. The time for this step varies based on the desired doneness, but a medium rare steak should come to temperature in about 6 to 8 minutes.

  • Rest and serve. Remove steaks to a cutting board and let rest for 5 to 10 minutes before serving.
