Beef Barley Soup

Nothing is more comforting than a bowl of soup to warm you from the inside out. Add some crusty bread, a crunchy green salad and some fruit for dessert to create a complete meal.

To vary this soup you can add 1 cup chopped canned tomatoes to a cup beef broth, or a cup sautéed chopped mushrooms. This soup freezes well, so consider making a double batch and freezing half of it in individual-sized containers. It’s definitely worth making your own rich beef broth for this soup. To make things a little easier, make the broth ahead of time and freeze it.

Instructions

  1. Heat the broth and add the carrots, onions, celery and barley.
  2. Cook for about 25-35 minutes or until the orzo is tender.
  3. Add the reserved pieces of beef, cut into small pieces and the chopped parsley.
  4. Season with salt and pepper.
  5. Serve hot, drizzled with a drizzle of olive oil and grated cheese.
