I’ve been sick all week with a bad cold and cough. Whenever I’m sick I miss my mother’s chicken noodle soup, but since she’s not here to make it for me, I had to make it myself. What’s better than a warm bowl of chicken soup when it’s cold outside and you’re not feeling well? Nothing, 🙂 This chicken and pasta soup it was absolutely delicious.
Ingredients you will need

Pasta: Spaguetti or angel hair.

This chicken and noodle soup is great for when you have a cold or if you’re craving something easy to eat during the week. It is perfect for lunch, dinner or an aperitif.
Cooking notes
Store leftovers in the refrigerator in a sealed container for up to 3 days. Add more chicken broth before reheating if the soup seems dry.
I like to serve my chicken noodle soup with avocado and lime juice for even more bright flavor.
How to make chicken noodle soup
Place the chicken in a medium pot and add the chicken broth. Bring to the boil and then reduce the heat to low. Add the rest of the ingredients, except the pasta and coriander.
Cook for about 35-40 minutes or until the chicken is completely tender. Remove the chicken from the pot and remove the meat from the bone. Remove the bones and set the meat aside.
Add the pasta and cilantro to the soup. Cook for about another 8 minutes. Return the chicken to the pot and serve hot with lime and avocado on the side
