Chili Vinegar – An Essential Thai Condiment (prik nam som)

Chilli vinegar or I am here it is one of the essential condiments of Thai cuisine, especially for pasta dishes. It adds a touch of acidity with a little heat, perfect for balancing richer dishes. For many Thais, myself included, a pinch of prik nam som is considered mandatory for dishes such as pad see ew and boat noodles.

Instructions

  • Optional step: Char the chiles and garlic by placing them in a dry skillet over medium-high heat and stirring for a few minutes until charred spots form.

    2-3 Thai chillies, 1 clove of garlic

  • Crush the chillies and garlic in a mortar and reduce to a paste, then add the vinegar and stir to combine. Alternatively, blend all the ingredients in a blender, although you may need to use a little more to mix them properly.

    ¼ cup white vinegar

  • Store it in the refrigerator in a sealed container and it should last indefinitely.
