Nothing surpasses the genius of pintxos. These small slices of crusty bread topped with delicious savory morsels they are a fantastic way to eat during the evening. They are the main reason I visit the Basque Country (believe me, it’s not the time)!
Indeed, pintxos they are one of the reasons why San Sebastian is one of the world capitals of good food! Every bar in town is known for at least one or two of these little morsels. Pintxos it can be anything from simple morsels of ham and cheese to artistic creations with unusual seafood (galleywhoever?).
But among all the pintxos in the city, always been my favorite goat’s cheese with caramelized onion. It’s made with good bread topped with creamy goat cheese and sweet caramelized onions. It’s easy, delicious and quick to prepare when you have unexpected company coming over!

This caramelized onion and goat cheese pintxo recipe requires just a few simple ingredients. Here are the key ingredients in this simple appetizer!
- Goat cheese: Use good quality goat cheese for a wonderfully creamy texture and flavor! If you live near a dairy goat farm, you may be able to get some fresh, locally produced cheese, which would be fantastic in these pintxos.
- Onion: I like to use regular yellow onions in this recipe. A touch of vinegar and sugar helps them slowly caramelize into a delicious golden brown coating!
- Sliced bread: For this recipe, use a freshly baked baguette or similar bread. Don’t use anything stale or frozen; texture and flavor will be missing.
- Fresh rosemary: Not only does this make a beautiful side dish for pintxos, but it also pairs perfectly with the cream cheese and rich onions.

How to prepare pintxo with caramelized onion and goat cheese

- Heat some olive oil in a pan over medium-high heat, then add the onions and cook until softened, about 10 minutes. Be sure to stir frequently. (image 1)
- Reduce heat to medium-low and add the salt, sugar and vinegar. Mix well. (image 2)
- Continue cooking the onions until they turn a deep, dark brown color and taste sweet, about 30 more minutes. Stir every 4-5 minutes and add a drop of water from time to time to prevent burning. (image 3)
- In the meantime, toast the baguette slices in the oven at 160°C (325°F) until golden brown, about 6-8 minutes. (image 4)
- Prepare the pintxos Of spread a little goat cheeseand on every slice of toast. (image 5)

Heat a large skillet over medium-high heat and add the olive oil. Once heated, add the onions and cook for 10 minutes, stirring often.

Reduce the heat to medium-low and add salt, sugar and vinegar. Cook for about 30 minutes, stirring every 4 to 5 minutes, or until the onions are a deep, dark brown color and taste sweet and soft. Every now and then add a little water to the pan so as not to burn them. Let them cool for at least 10 minutes.

Meanwhile, heat the oven to 160°C (325°F). Spread the baguette slices on a baking sheet and bake until lightly toasted, about 6 to 8 minutes.

To make the pintxos, top each slice of bread with a heaping teaspoon of onion and a heaping teaspoon or large slice (depending on the type) of goat cheese. Decorate with a few rosemary leaves and serve at room temperature.
