4-5 cups bread flour
1 cube of fresh yeast (17 g)
3 tablespoons of olive oil
2 tablespoons of sugar
1 tablespoon of salt
Enamel:
1 tablespoon of yogurt
1 tablespoon of water
Nigella seeds or sesame seeds
Place the dough on the counter and punch to release the air. Cut the dough into two pieces, then each piece into 8. With the palms of your hands, form 8 balls. Grease a baking dish or a round baking dish (20-30 cm) and place a ball in the center and the other 7 around it, leaving a little space. And do the same with the other half of the dough, so you will bake 2 flower loaves. Cover it with a clean cloth and let it rise for ½-1 hour in a warm place (if you have time let it rest for 2 hours).
Mix 1 tablespoon yogurt and 1 tablespoon water in a small bowl, then brush the top of the bread with this glaze. Finally, sprinkle the nigella or sesame seeds on top.
Preheat oven to 425F (220C). Place the bread on the central rack. Bake for 25-30 minutes, until golden. After removing it from the oven, cover it with a clean tea towel or tea towel to keep the bread soft.

PS: Do not use metal containers when kneading or resting the dough. Metal ruins the consistency of the dough.
P.S2: If you want the top to be lighter brown, beat 1 egg yolk and 1 tablespoon milk for the glaze, instead of yogurt and water.

Cover it with cling film or a clean cloth (see the picture) and wait in a warm environment for about 2 hours until the dough doubles in volume (see the picture). Place the dough on the work surface and press it to release the air. Divide the dough in half and divide each into 8 equal pieces and form 16 round balls with the palms of your hands. Grease a round baking tray or a baking tray with a diameter of 20-30 cm, place a ball in the center and arrange the other 7 balls at intervals around the central one. Do the same process for the other 8 round balls, so you will have made 2 flower loaves.
Cover it with a clean cloth or cling film and let it rest for about ½ – 1 hour until the dough doubles in volume (let it rest for 2 hours if you have time). Then mix 1 tablespoon of yogurt and 1 tablespoon of water and apply it to the dough with a brush. Sprinkle black cumin or sesame seeds on top. Preheat the oven to 220C (425F), place the bread on the middle rack and bake for 25-30 minutes until golden brown. When you remove it from the oven, cover the pan with a clean tea towel or tea towel to prevent it from getting air. This way your Cicek bread will be soft.
Cicek Ekmek is delicious hot, with butter, honey butter or spicy olive oil.
