I extend all my love for breakfast sandwiches to any variation of this creation. English muffins. Pepperjack cheese. Gouda cheese. Roasted red peppers. Magic green sauce. Fried eggs with a runny yolk.

Making these sandwiches couldn't be easier! Here's what you'll do.

  1. Get your croissants nice and golden with a quick bake for a minute.
  2. Cook the eggs in a pan over medium-low heat until perfectly soft. Gently slide the spatula across the pan when the edges of the eggs begin to create soft curds. Watch them carefully so as not to overcook them.
  3. Build your own breakfast, Sammie! Top with some crispy bacon, spicy garlic butter sauce, guacamole (of course), and a slice of pepperjack cheese. To keep it a little more delicate, you can also use a slice of cheddar cheese. My goodness! You are about to be in true breakfast heaven with this one.

This is not your McDonald's breakfast sandwich (although, to be fair, I've been known to eat and love a sausage and egg biscuit in moments of weakness). But no, there are no perfectly formed egg discs here.

We're talking about super creamy, delicately cooked and soft scrambled eggs. I will change my life.

If scrambled eggs aren't your thing, you have options. You could prepare eggs on a baking sheet for a crowd. Cook eggs fried or sunny side up. Put it in your shirt. Your choice!

Variations of breakfast sandwiches to try

While we really love these breakfast sammies with bacon, garlic butter sauce, guac and cheese, it's truly a choose-your-own adventure here and there are endless combinations that would work well and be very, very delicious! Maybe you want to try a waffle or tortilla wrap instead of a croissant? I love it! These waffle nooks and crannies are perfect for holding your sammie components. Maybe a layer of crispy hash browns or potatoes tucked in there? This is a yes from us! Did we hear anyone say a little pickled onion as a condiment for hot or spicy sauce or a little heat?   1. Toast your croissants for a few minutes in a 350 degree oven, cut side down on a baking sheet. You can also do this in the toaster, if the croissants fit.
  2. When the croissants are toasted and all the other ingredients are ready, prepare the eggs. SOFT SCRAPPEDRemember?
  3. Assemble the sandwiches immediately, while the eggs are at their best: a layer of tomato sauce, eggs, cheese, bacon and guac on top. My goodness.
