These cucumber and smoked salmon bites are the perfect low carb Christmas appetizer. Each cucumber cup is scooped and filled with smoked salmon, whipped cream cheese, red onion, and capers – basically everything I love in a bagel, minus the carbs!

What you will need

You only need 6 ingredients to make this easy smoked salmon appetizer. The recipe card below gives the exact measurements.

  • Red Onions for flavor, if you don’t like raw onions use shallots or chives.
  • Whipped cream cheese it is lighter than regular cream cheese. Let it reach room temperature so it will be easier to mix it.
  • Capers: If your salmon isn’t very salty, you may need to add more capers. If it’s too salty, use less.
  • Fresh dill it pairs beautifully with smoked salmon.
  • Salmon: When I order smoked salmon from the bagel shop, it is typically Nova, which is cured and lightly smoked. This Acme Smoked Nova Salmon it is available in most supermarkets.
  • English cucumbers swap bagels for a low-carb bite topped with all the traditional salmon bagel toppings.

How to prepare cucumber and smoked salmon morsels

This simple recipe for Cucumber and Smoked Salmon Bites makes about 32 servings, but if you have a larger party, feel free to double it. Printable instructions can be found in the recipe card below.

Smoked salmon and cream cheese filling: Start by combining the red onions, cream cheese, capers, dill, and smoked salmon in a medium bowl. You can prepare it the day before and store it in the refrigerator.

Prepare the cucumbers: Peel the cucumbers, leaving strips of peel, then cut into ½-inch slices. Dig out the central part of the cucumber with a melon corer, avoiding cutting the bottom.

Assemble the cucumber bites: Spoon salmon mixture into each cucumber cup and garnish with dill.

Variations

  • Salmon: You can use any smoked salmon you prefer. Gravlax might work too.
  • Cream cheese: Use 1/3 less fat cream cheese, AKA Neufchatel, if you can’t find it whipped.
  • Onions: Replace the shallot.
  • Cucumbers: Regular cucumbers will work too.
  • Herbs: Swap dill for chives.

Smoked Salmon vs. Nova Lox

Nova lox is cured and lightly smoked, so it has a delicate, creamy, buttery flavor with a hint of smoke. Smoked salmon is preserved by salting and smoking, so it has a slightly salty and smoky flavor. I prefer Nova Lox, which is commonly served on bagels in New York.

  • You can assemble these Cucumber Smoked Salmon Bites up to 24 hours before serving. Store them in the refrigerator in an airtight container until ready to serve.
  • They can be left at room temperature for up to 2 hours. If they’re sitting out for a longer period of time, it’s best to throw away any leftovers, as they may no longer be safe to eat.
  • Once assembled, this starter will last up to 2 days.

  • In a medium bowl combine red onion, cream cheese, capers, dill and smoked salmon.
