Easy Paleo Banana Pancakes

These simple banana pancakes take me back to Saturday mornings at my parents’ house. My dad made pancakes every Saturday morning. As a child, the aroma of batter on a hot griddle would wake me up and I would run downstairs to watch the pancakes boil and brown.

Even as a teenager, who, all things being equal, probably would have stayed in bed until noon if he could, I would hear my father making all sorts of noises in the kitchen and time my arrival just as the first pancakes were flipped in my dish. I suspect this may have been my father’s plan to get me out of bed.

Dad’s pancakes obviously weren’t Paleo, especially after I covered them in sticky syrup. And let’s face it: After a huge plate of hush puppies drenched in syrup, there’s only one thing you want to do: take a nap. So when I started making this Paleo pancake recipe, I was thrilled. All the memories of home, but with all the health benefits of my Paleo diet!

The main ingredient of traditional pancakes is wheat flour. Since this is a no on the Paleo diet, this recipe uses coconut flour. But you’ll notice that it’s just a little bit of coconut flour – two and a half teaspoons, to be exact – which, if you’ve ever made traditional pancakes, will seem like an oddly small amount of flour. But here’s the secret…

The banana puree in these pancakes isn’t just for flavor, although the banana flavor certainly comes through. Mashed banana really works with the egg and a little coconut flour that you use to create the traditional pancake texture. So don’t leave out the bananas!

The coconut flour and coconut oil you use to fry these babies won’t give you an overwhelming coconut flavor—the coconut flavor is so subtle that you probably wouldn’t notice it if you didn’t know it. But since you know it, you might catch a hint of it. But of course the coconut flavor goes amazingly well with the banana and cinnamon flavors.

You could almost imagine yourself in the Caribbean, having breakfast next to the crystalline crashing waves. In fact, you should imagine yourself there because, well, why not?

To add to the tropical flair of these easy banana pancakes, I love adding more fruit on top when serving them, whether it’s just me or if I’m sharing my pancakes with a friend or two. My favorite topping is strawberries, but any type of berry – blueberries, raspberries, blackberries – yum! – that would be great. Or a mix of all of them!
