Lemon Coriander Soup Recipe

  • To start preparing the lemon and coriander soup recipe, have all the ingredients ready.

  • In a pan, heat the oil over medium heat, add the ginger and garlic and sauté for a couple of minutes. Once browned, add the onion.

  • Cook the onions until they become translucent. It will take about 2-3 minutes.

  • Then add the finely chopped carrots, coriander leaves and mix.

  • In a small bowl, combine cornmeal with 1/4 cup water until there are no lumps.

  • At this point add the water, the cornstarch mixture and bring the soup to the boil. While the soup comes to a boil, add salt and pepper.
