The combination that makes a truly heavenly bite.
The first night I made it for dinner, I put everything on the plate, we took the first bites and both Bjork and I said out loud: Yes. This is really good. Yes, yes, yes.
Is it because it’s an excuse to fill half your plate with that wonderful peach salad? Perhaps. I love peaches.
But the shrimp are delicious too! I made it one more time this afternoon to make sure I had all the correct spices before posting this recipe, and in the end I was left standing over the pan eating just one more. And then just one more. And then just one more. They can easily stand on their own.
Besides being super simple (HURRAY, IT’S MY FAVORITE THING), the thing I love about this is that it creates that mix of heat, smoke and sweetness with some new flavors.
In our house we rely on a lot of the same good stuff: soy. Coriander. Cumin, chilli, green onion, garlic, etc. But this plays in a slightly different space! And I love it. We have the smoky heat of curry powder and smoked paprika, the sweetness of peaches, the tang of lime juice and shallots, and the freshness of MINT! which never fails to leave me happy. It’s simply a juicy and delicious combination. It reminds me a bit of this cult BBQ salmon recipe, but slightly simpler and quicker.
My girls typically lean on the peach and rice salad and might eat some pre-cayenne shrimp, while Bjork and I can mash up the rest of the pan of shrimp, no problem.
