Wow, I found another delicious beef fried rice with magical ingredients: pickled mustard green.
Marinated mustard green is also known as Sichuan Suancai. Its delicious sour flavor highlights the beef. It also pairs well with other proteins such as pork and chicken, making fried rice unique and special. You can buy it in Asian stores or, if possible, make it at home by following these instructions.

If you don’t have pickled mustard, try Kimchi. Fermentation creates a unique combination of spicy, sour and umami flavors. So they are similar in flavor and taste and you can get a similar taste.
ingredients
- Two eggs
- beef steak, cut into shreds
- 2 cups leftover rice
- Three shallots, cut into sections
- Five coriander, cut into sections
- Green pickled mustard, chopped
Marinating the meat can help give a primary savory flavor to the meat, creating different layers of flavor than fried rice.
Marinade
- 1.5 tbsp. oyster sauce
- 1/2 tbsp. light soy sauce
- 1/4 tsp. Ground pepper
- 1/4 tsp. sugar
- 1/2 tbsp. Chinese cooking wine, Shaoxing wine
- 2 teaspoons. cornstarch
- 1 Teaspoon. sesame oil
Instructions
Preparation
Cut the meat into strips and marinate it with the marinating sauce. Mix well and set aside for 15 minutes.
Finely chop the pickled mustard.
If you need to be careful about your salt intake, I recommend soaking and washing the marinated mustard before using.
Fry the eggs
Mix the eggs evenly. Add some hot oil to a pan and pour in the egg liquid. Break it when it is almost solid. Transfer the eggs.

Add extra oil and fry the pickled mustard greens for about 1 minute until aromatic.
Fry the meat and add the rice and the rest of the side dishes
Add cooking oil to a large pan until the oil evenly covers the bottom of the pan. Distribute the beef strips. Let them sit for 5-6 seconds and gently stir several times until the beef strips change color. Transfer it because we don’t need to fry it too much.
Place leftover rice, scrambled egg and beef. Add some soy sauce and pepper.
Turn off the heat and add the green onion and cilantro, if using. Serve hot.
