This Thai Cilantro Lime Dip is ready in less than 10 minutes and it goes with almost everything. You can adjust the flavor to your liking making it spicier, spicier or sweeter. His healthy and gluten-freemade with fresh and natural ingredients, contains no oiland it pairs perfectly with many of my Thai recipes!
Take note of the ingredients
You can find everything you need at Asian markets or Asian grocery stores. Head to the recipe card at the bottom of this post for all the measurements!
- Coriander – Use both the leaves and stems of coriander for a bright, fresh flavor.
- Sugar – I used natural cane sugar, but white sugar is also fine. Feel free to adjust the sweetness to your liking.
- Fish sauce – Salty, rich in umami and a key ingredient in Thai fermented fish cuisine. I recommend using Megachef fish sauce.
- Green chillies – I used Thai Jinda chillies, which give a rather spicy touch! You can use any fresh green chile you have on hand, as long as it’s green.
- Fresh lime juice – Adds tangy acidity that balances sweet and savory flavors.

How to prepare coriander sauce
Step 1: Combine all ingredients in a food processor or blender and blend until smooth. Taste and adjust the seasoning as needed – add a little more sugar if it’s too spicy. If using a mortar and pestle, pound the dry ingredients first, then add the sauces.
Serving Tips
How to Store Leftover Dipping Sauce
- Refrigerate: Transfer the dipping sauce to an airtight container and store in the refrigerator for up to 3 days.
- Freeze: For longer storage, pour the sauce into an ice cube tray and freeze. Once frozen, transfer the cubes to a freezer-safe bag or container. Thaw individual portions in the refrigerator as needed and stir before serving to refresh the flavors.

- 6 cloves garlic
- 50 ml waterfall
