Hey, I hope everything is going well. We are in our country house in the Stockholm archipelago enjoying the Easter holidays, but I wanted to publish this recipe before citrus fruits were completely out of season. I’ll tell you more about the salad below, but first we wanted to share some links to things we like, projects we’ve been involved in, and new books we can’t wait to read.

– When Covid hit Denmark, Noma restaurant had to temporarily close, but on the bright side, the Noma crew opened an outdoor burger restaurant instead Pop and theirs Vegetarian burger it’s made with fermented quinoa and looks amazing. We can’t wait to visit!
– Every recipe in Hetty McKinnon’s new book To Asia with love looks so good Count me in for all the simple pasta dishes!
– Luise and I participated in the second episode of Clean Project podcast coming soon with Oliver Amdrup-Chamby of Puori and Jackie Bowen of Clean Label Project, where we talked about transitioning to a plant-based diet and learned a lot about toxins in foods. Find it in your podcast player.
– Iconic chef David Chang cooks salmon in the microwave and the comments section goes crazy. Fun to read.
– For anyone interested in working in social media I highly recommend signing up with Rachel Karten “Link in Bio” newsletter. She was previously the social media manager at Bon Appétit Magazine and her interviews are stellar! It also lists job opportunities on social media.

– Heidi Swanson is one of the first food blogs we read and all her books are wonderful with that California vibe. We ordered his new book Super natural simple and I can’t wait for it to arrive.
– Fun news! We’re working on a completely new edition of our plant tattoos together with illustrator Penelope Dullaghan and the sketches so far look fantastic! They will be available this summer.
– The last book we want to recommend is Julia Turshen’s new book Simply Giulia. He is intelligent, creative, simple and has a very balanced approach to health.
– If you are wondering what to cook during the Easter holidays here are some tips:
Soups: Asparagus and spinach soup or Carrot, tomato and coconut soup
Salads: Grilled asparagus and creamy lemon quinoa or salad for spring celebrations
Cakes: Perfect picnic cake or Beetroot and vegetable tart
Chocolate: Chocolate Tahini Cups or this Banana, almond and chocolate cake
Moving on to this salad. I cooked it like a Therapeutic lunch on Instagram the other day and it’s as beautiful as it is simple. This winter we have practically lived on citrus fruits, both as snacks but also in salads for lunch and dinner. If you haven’t tried citrus salads, they taste amazing paired with bitter greens, Baked feta cheese or – as in this recipe – with olive oil, creamy avocado, crunchy hazelnuts, sweet dates and a little bread to absorb the leftover juices.
