Soy milk is often used for vegan ramen soup as it adds richness and creaminess to the broth while being all plant-based. In this simple (non-vegan) recipe, we simply replaced some of the water with soy milk when making packaged instant ramen. No additional seasonings other than some sesame seeds and sesame oil added at the end. The soy milk adds depth to the broth, but isn’t overly creamy or fatty. It complemented the flavor of the Tonkotsu very well. We put an egg in the same pot as we made the noodles, so it’s a one-pot meal and super easy!
You can use any instant ramen you like, but we recommend finding a premium ramen. Instant ramen has evolved greatly over the years, and the quality of some premium ramen is approaching restaurant level. The broth has a complex flavor and the noodles are often not fried and have a rubbery texture. In this recipe we used Nissin RAOH Ramen Noodle Soup, Tonkotsu. It’s difficult to find high-quality ramen at retailers outside of Japan, but they’re now being sold on Amazon.com! (We receive a small commission if you purchase from our link above.) RAOH is one of the best-selling ramen in Japan and the taste is excellent. The flavor options are Tonkotsu, Miso, and Soy Sauce, and we thought the Tonkotsu (pork bone broth) went very well with the creamy soy milk. While a simple bowl of ramen with just an egg and green onions can be quite comforting and satisfying, you can definitely add some chopped veggies, meat, or seafood. I hope you’ll give it a try soon. Boil 1 1/4 cups water in a small saucepan and add the ramen noodles (for a package that calls for 4 cups water, adjust the amount depending on the brand). Once the noodles are gone, drop in an egg and continue cooking. About 1 minute before the total cooking time, add the soy milk. Bring to the boil and turn off the heat. Add the flavoring sachets and transfer them to a bowl.
