Ingredients for leg soup
Wand – use young thighs that have tender seeds that cook faster and cause the meat to remove easily from the thighs. The legs can be cooked in an open pan for 10 minutes. You can cook in pressure cooker for 2 whistles.
Onion or Shallot – onions are sautéed with ghee to add flavor. Instead of onions you can use shallots.
Garlic – use whole garlic cloves cooked in ghee for flavor. You can add more or less depending on how thick you want the soup to be.
Ghee – pure desi ghee is added in the preparation of the soup to make it even tastier.
Spice powders – cumin powder and pepper powder are the main flavorings.
Tricks for a simple leg soup
In this recipe I have shared a recipe that involves cooking the thighs separately and removing the meat from them. The pulp is then pureed to form the base of the soup. But if you don’t have much time available, you can follow this simple trick to prepare leg soup.
Cut the leg into small pieces, boil it and puree it in the blender, skin and all. Blend until smooth. Now you can filter the broth and prepare the soup. This method extracts maximum flavor from the legs, but the only drawback is that the soup will be runny. But the flavors will still be there.
How to Make Chopstick Soup (Step by Step Pictures)
Cooking Thighs
1) Take the leg and cut it in half to make it cook faster. You can also cook the leg whole.
2) Place the leg in a pot or pressure cooker.
3) Cover with water. Add water to soak the thigh. This will also turn into chopstick broth.
4) Bring the thigh to the boil. Cook for 10 minutes until the thigh is fully cooked.
5)Now the thighs are completely cooked. You can taste the thigh to see if it is cooked completely.
Removing the meat from the drumstick
6) Filter the cooked leg through a sieve. Allow the wand to cool completely to facilitate the peeling process.
7)Once the wand has cooled enough to handle. Take a thigh in your hands and use the spoon to scoop out the meat. It will be easy to scoop out the cooked thigh meat using the spoon.
8)This is the outer skin of the wand, you can discard it.
9)Take the meat of the thighs in a separate bowl and set aside the cooking broth in a separate bowl.
Sauté onions and garlic
10) Heat the clarified butter in a pan. Add onions or shallots. Saute the onions for 1 minute until golden brown.
11)Add the peeled garlic cloves and mix well. Cook it for a few minutes.
13)Add the thigh meat and mix once.
Ground leg soup
14)Take the cooked thigh in a blender. We will grind until we obtain a smooth puree.
15)You can add some of the thigh broth to the cooked thigh while grinding.
Prepare the chopstick soup
16) Place the stick in a pot. Bring it to a full boil.
17)Add the thigh puree to the broth. This puree naturally adds the creamy texture to the soup.
18) Mix well and cook for a few minutes.
19)Add the toasted cumin powder and mix well. This adds a smoky flavor to the soup.
20) Season the soup with salt.
21)Add black pepper powder to taste.
22) Bring the soup to the boil. As the soup boils a foam will form on top.
23) Gently remove the foam that has formed on top with a ladle and eliminate the foam.
24) Eliminate the foam on the surface.
25)Add the coriander leaves and mix well.
26) Mix well. The leg soup is ready to be served.
