Do you tend to cook more rice than you can finish? Filipinos love this side dish and so sometimes we underestimate how easy it is to fill up with one cup. Of course, you can always store the rice in the refrigerator and reheat it again the next day for your meals. But it’s not funny, is it? If I were you, I would use this opportunity to create some delicious chicken fried rice!
This is a delicious, yet surprisingly simple recipe. It has all the great ingredients that make a perfectly savory and meaty dish of fried rice, but it requires a little less preparation. This is partly because we use frozen mixed vegetables, which you can easily buy pre-packaged at the market. The cooking process is even easier as all you have to do is prepare the chicken and mix the ingredients in the pan in the right order.
What does chicken fried rice taste like?
If this has piqued your interest in cooking fried rice, here’s a preview of the end result. Our chicken fried rice is flavorful, seasoned to perfection with soy sauce and sesame oil. You’ll also get plenty of meaty flavor from the chicken breast. But what really gives the rice that satisfying, rich, savory flavor is our mix of chopped onion and garlic.
Given how tasty this fried rice is, you can actually cook it right for your meal. It can definitely stand on its own because it’s filling and deliciously satisfying. However, you can combine it with other tasty dishes, which I will tell you about later.
For now it’s time to get ready with our ingredients. Let’s start cooking our chicken fried rice, really delicious but easy!
What to serve with chicken fried rice
Pork dumplings
If you’re not planning on having dumpling fried rice, it’s definitely time to start now. This is a pairing that has long proven to be great together. It’s on restaurant menus, in local markets, and hopefully soon in your kitchen too! I love the meaty yet light flavor of these pork dumplings with the savory flavor of our chicken fried rice. The simplicity of this steamed dumpling offsets the savory quality of most types of fried rice. Of course you can also enjoy it with white rice. But for me, the best dining experience would be to have this dish enriched with chives and ginger along with the goodness of our delicious chicken fried rice.
Creamy Macaroni Soup (Ala Jollibee)
As I said before, our main recipe is one that is filling enough to be a meal in itself. That being said, a suitable side dish to that dish to really complement it is a Creamy Ala Jollibee Macaroni Soup! Many Filipino dishes contain stew because the heat this brings to any meal is difficult to omit. And so you can bring some to breakfast, lunch or dinner with the perfect deep dish. This way, you can also have your favorite fast food without having to go to the store. Plus, it can taste even better homemade because it’s healthier and all your ingredients will taste really fresh.
Shanghai Olympics
I don’t know about you, but a crunchy side is one of the best things to pair with fried rice. And so I also like to indulge in a beloved Pinoy recipe that most people have probably eaten at least once at home: Lumpiang Shanghai! Now, if you have yet to learn how to make this, I have a pretty simple recipe you can follow. All you need to do is mix the filling ingredients together, assemble your spring roll and fry it! And to ensure you cook well, avoid the high heat setting on your stove. This helps us get the filling cooked evenly.
Dynamite Lumpia
The next tip is a street food classic that you may have dared to try when you were younger. After all, it can be a little intimidating to eat a whole long green chili pepper. But I’d say the crunchy, beautifully brown wrapper definitely helps make this dish a lot less scary. Don’t forget that Dynamite Lumpia also comes with plenty of delicious cheddar cheese to balance out the spice from our peppers. And this kind of flavor pairing truly makes it one of the best snacks! I also like to have it alongside fried rice because it can be somewhat of a palate cleanser.

How to make chicken fried rice
First on our list of components is 6 ounces of boneless chicken breast. We need the boneless kind since we will need to cut it into small pieces. And you don’t want bones getting in the way while you eat your fried rice. Once you have finished cutting the chicken, place it in a bowl. Then pour in 1 tablespoon of oyster sauce, 3 tablespoons of soy sauce and ½ teaspoon of sesame oil. Mix everything well and then set aside.
We take our 3 tablespoons of cooking oil and let it heat in a pan. Once it’s hot, you can put your 2 beaten eggs in it. Fry them until they are completely cooked. Then transfer them to a container of your choice. Just cut them slightly into smaller pieces. We’ll put this aside for now too.
Work with garlic and onion
It’s time to take 1 onion and 2 cloves of garlic, both chopped. You will have to put them in a pan, together with the remaining oil from the previous cooking of the eggs. If you need more oil, feel free to add it. Just brown the garlic and onion together.
Remember the chicken we marinated a while ago? Place it in the pan when the onion becomes soft. Just fry everything together for 2 or 3 minutes. You’ll know the chicken is ready when it’s nice and golden.
Place 1 ½ cups of frozen mixed vegetables, which would contain carrots, peas, and corn, in the pan. Continue to fry everything for 2 minutes. Just make sure to let all these veggies cook evenly.
Place the rice in the pan
Here is one of our main ingredients! Place 3 cups cooked white rice in the pan. Then put the various components together. Continue like this until the colors blend and everything is well blended. And then cook the fried rice for another 3 minutes.
It probably hasn’t been that long, but we’re almost at the finish line! Simply add salt and ground black pepper as needed. You can be generous with this, but keep in mind that our other ingredients like soy sauce are already quite flavorful.
Once this is done, you can transfer your delicious mix of ingredients onto a serving plate. The best and truly appropriate way to eat fried rice is while it is hot. And so I would recommend eating it immediately after cooking it!

Chicken Fried Rice Recipe
Quick and easy chicken fried rice at home
Instructions

Cut the chicken into small pieces. Place in a bowl and combine with the sauce ingredients. Mix well. Set aside.

Heat the oil in a pan. Fry the beaten eggs until done. Remove the cooked eggs from the pan. Cut it into pieces and then set it aside.

Using the remaining oil (add more if necessary), sauté the garlic and onion.

Add the marinated chicken once the onion has softened. Stir-fry for 2 or 3 minutes.

Add the vegetables. Continue frying for 2 minutes.

Add the rice. Mix until all the ingredients are well combined. Continue cooking for 3 minutes.

Season with salt and ground black pepper.

Transfer to a serving plate. Serve immediately.
