Biscuits are a perennial delight that knows no season. Their appeal, both in flavor and texture, seems universal. Maybe it’s the comfort they bring, that warm and soft embrace, that makes them irresistible. After all, who can resist the allure of a freshly baked cookie?
I recently came across the enchantment of chai tea. I realized that chai embodies the essence of a cookie in a cup. Consistently welcoming, it envelops you in warmth, evoking holiday feelings no matter the time of year.
In homage to the calming charms of chai, I created a cookie that captures the very essence of that comforting sip. Enriched with aromatic cardamom and fragrant cinnamon, these biscuits echo the familiar embrace of a steaming cup of chai. Indulge, savor and savor, because every bite is a toast to that much-loved warmth.
For this recipe you will need:
- 1 teaspoon baking soda

1 1/2 cups brown sugar, light
- 1 teaspoon vanilla extract
- 1 stick of Crisco
- 2 eggs
- 1 teaspoon cassia cinnamon, ground
Preheat oven to 350 degrees Fahrenheit
Mix together the flour, cream of tartar, baking soda, half the cardamom (1 teaspoon), half the cinnamon (1/2 teaspoon), and salt in a large bowl.
Then combine the Crisco and brown sugar in the bowl of a stand mixer or electric mixer. Beat on medium speed until well combined. Increase speed to high and beat until very light and fluffy, a few minutes. Reduce the speed to medium and add the eggs, one at a time, and the vanilla extract. Make sure there is no dough on the sides of the bowl.
Add about a third of the dry ingredients; beat on low speed until fully added. Repeat two more times, until the ingredients are completely blended.
Then cover the dough and place it in the refrigerator for at least an hour, until it is firm
Mix together the granulated sugar and remaining cinnamon and cardamom in a small bowl. Scoop small balls of dough, a few at a time, into the sugar, cinnamon and cardamom mixture, then roll the dough into the mixture to coat them, pressing the mixture down. Arrange cookies 2 inches apart on a baking sheet.
Cook for 9 minutes or until cooked through. Once removed from the oven, press them lightly with a spatula or cup to flatten them slightly.
