  • ½ cauliflower
  • ½ can of chickpeas

  • 1 ¼ tablespoon tahini
  • 2 tablespoons Greek yogurt

Instructions:

  1. Start by preheating the oven to 425F and greasing a large baking sheet.
  2. Rinse the chickpeas and dry them, removing any loose skin. Season them with olive oil, paprika and Brasa sauce and place them on one side of the baking tray.
  3. Cut the cauliflower into florets, season them with the Brasa sauce and place them on the other side of the pan.
  4. Cook the chickpeas and cauliflower for 25 minutes or until the cauliflower is golden brown. If the chickpeas are not crispy enough, cook them for another 3-5 minutes.
  5. While the cauliflower and chickpeas are cooking, prepare the sauce by combining the tahini, lemon juice and Greek yogurt in a bowl. Mix until the ingredients are well combined.
  6. Once the chickpeas and cauliflower are cooked, add them to a bowl along with some spinach. Season the salad with the dressing and mix well.
  7. Garnish the salad with some fresh herbs and serve immediately.
