There’s no reason to let leftover ingredients go to waste. The post-holiday period often means a surplus of food like pineapple and ham. But considering how well the acidity and sweetness of these two combine, you should definitely use them for another dish. That’s why I’ve combined more delicious ingredients to create the always vibrant and flavorful Pineapple Fried Rice!

How does pineapple fried rice taste?

You can expect a broader mix of flavors beyond our Christmas ham and pineapple bites, especially coming from minced garlic, minced onion, green onions, soy sauce, and it doesn’t stop there. The beauty of fried rice is that it almost always works on the principle of “the more, the merrier!” But we also have a great balance so that the flavor of some ingredients is not too overpowering. This is perfectly contrasted by the tangy, refreshing flavor of pineapple.

A pleasant variety of textures also comes into play with our roasted cashews and peas. Don’t forget to use leftover rice as it is drier and less starchy. This makes it better for cooking again together with other components.

This last part is more about presentation than taste, but it really raises the level of the overall dish. You can serve it on any plate or container you want, but if you want something that will really catch the attention of your guests, I recommend this method. Try using the pineapple shell as a serving dish to turn it into a beautiful bowl of pineapple fried rice! But first let’s prepare our dish.

How to make pineapple fried rice

1. Fry the egg

  • Prepare the ingredient and cooking station – First on our list is to beat 1 egg. Then you should pour 2 tablespoons of cooking oil into a pan. Simply let the oil heat up.
  • Cooking the egg – Once the oil is hot you can pour the beaten egg into it. Fry it until it becomes firm. Then turn it over so you can let the other side firm up and cook.
  • Slice the egg – Take out the egg and then slice it into smaller pieces.

2. Fry some ingredients

  • Cook the garlic and onion – We will take another pan and heat the oil we have left, which would be about 3 tablespoons. Then add 1 onion that you chopped and 4 cloves of garlic that you chopped. Brown them together.
  • Adding pineapple and ham – Place a few pineapple chunks on the other side of the pan and brown. Then move the ingredients aside again to make room for your 300 grams of DOC raw ham. We will continue to brown for another 2 minutes.
  • Incorporating more of our ingredients – We now add 2 peppers that we have diced, ½ cup of toasted cashews and ¼ cup of peas. Mix everything together.

3. Add the rice and season the dish

  • Cooking the dish with leftover rice – Time to incorporate one of the main ingredients! Add the 4 cups of leftover rice. Then fry the mixture for 1 minute.
  • Adding seasonings: Pour in a little soy sauce and also add ¼ cup of chopped green onions. Then just sprinkle as much salt and ground black pepper as you want.
  • Plate the dish – Now we can take the egg cut into slices from before and simply mix it on the plate. Place your beautiful fried rice on a serving plate of your choice, which could be the handy pineapple shell. And you’re done!

Here it is! You made some delicious pineapple fried rice. And although the set of flavors we have in this dish is enough to serve a tasty meal, you could also choose to pair it with some foods. Here are my tips!

What to serve with pineapple fried rice

Sweet chicken asado

Having your fried rice slightly sour and sweet with a dish that has its share of sweetness can be quite satisfying. That’s why I recommend this sweet chicken asado recipe enriched with soy sauce, crushed garlic, 5 spice powder and, of course, a little sugar! This has such a satisfying broth that pairs well with rice.

Pork adobo in pineapple juice with hard-boiled egg

As we learned in our recipe, incorporating pineapple can be a great way to improve the overall flavor of our dish. That’s why I made this Pork Adobo in Pineapple Juice with Boiled Eggs recipe. You can expect perfectly tender pork belly to taste even better with the rich, vinegary taste of any adobo dish. If you want a point of reference, I’d say it tastes like another Filipino favorite: Humba!
