So a super easy s’mores inspired recipe that can be made with my favorite brownie mix in minutes? Well, you know I agree.

What are easy s’mores brownies?
These easy s’mores brownies are a combination of two amazing things: gooey s’mores and fudgy brownies.
I have lots of brownie recipes made from scratch, like Snickers brownies and Oreo brownies. But I also have a not-so-secret love for Ghirardelli brownie mixes and use them all the time, too.
My super easy salted caramel brownies are proof of this.
This recipe is one of those secret cheat recipes that combines Ghirardelli brownie mix with a graham cracker base and a melted chocolate and marshmallow topping.
You get the fuzzy goodness of brownies with the gooey topping and crunchy graham crackers. Lots of chocolatey goodness in just one bite.
These easy s’mores brownies are also super quick and easy to make, so you can whip them up in a flash for last-minute parties or surprise guests.

How to make these easy s’mores brownies
Ready to see how easy these s’mores brownies are to make? But they are so good that no one will imagine how simple it was to put them together.
Ingredients you will need
To make this recipe you will need:
- 5 wholemeal graham crackers
- 1 package of Ghirardelli brownie mix
- ¼ cup water
- ¼ cup to ½ cup vegetable oil
- 1 large egg
- ½ cup semisweet or dark chocolate chips
- 1 ¼ cups mini marshmallows
These s’mores brownies are made in an 8×8 inch pan, so you will need 5 whole graham crackers (the entire rectangle) to cover the bottom of the pan.
To prepare the brownies you can use the Ghirardelli mixture you like best. The mixes vary in size from 18 ounces to 20 ounces depending on the flavor, but they will all work in this recipe.
To make the brownie batter you will also need the ingredients listed on the back of the box: water, vegetable oil and an egg. The amount of vegetable oil you need depends on the blend you purchase, so be sure to check and see what you need.
Chocolate chips and marshmallows are used for garnish. Mini marshmallows melt best, but you can cut large or homemade marshmallows into smaller pieces with oiled scissors.
I’m making these brownies
To make these easy s’mores brownies, start by lining an 8×8-inch baking pan with aluminum foil. Spray with non-stick spray.
Arrange the graham crackers in a single layer on the bottom of the pan. You should be able to fit 4 graham crackers in without breaking them.
Break the last graham cracker along the perforated lines as needed to fit. (See the photo to see how I arrange mine.)
Next, prepare the brownie batter following the directions on the box. Spread the brownie batter onto the graham crackers and bake at 180°C for 35 minutes.
As soon as the brownies are out of the oven, sprinkle them with the chocolate chips and then with the mini marshmallows.
Return the brownies to the oven and bake for another 5 minutes, or until the marshmallows are puffed and lightly browned.
Let the s’mores brownies cool for about 20 minutes before cutting and enjoying.
Warehousing
I love serving these simple s’mores brownies fresh from the oven. But if you have leftovers, they are still delicious at room temperature!
Store leftovers in an airtight container at room temperature for up to 3 days.

Absolutely, feel free to use your favorite brand of brownie mix if you don’t want to use a Ghirardelli mix. Just be sure to check what additional ingredients you’ll need and follow the package instructions for making the batter.
YES! I recommend cutting large marshmallows into smaller pieces with kitchen scissors greased with non-stick spray or vegetable oil. This will help the homemade marshmallows melt like mini marshmallows in the oven.

Preheat the oven to 180°C. Line an 8×8-inch pan with aluminum foil and spray with nonstick cooking spray.

Arrange graham crackers in a single layer in the prepared pan. You will need to break one of the graham crackers along the perforated lines so that they fit snugly in the pan. (See photo below.)

Prepare brownie batter with water, oil and eggs according to package directions. Spread the batter evenly over the graham crackers. Cook for 35 minutes. Remove from the oven and immediately cover evenly with the chocolate chips and then add the marshmallows. Cook for an additional 5 minutes or until the marshmallows are puffed and lightly browned.

Cool on a wire rack for about 20 minutes before cutting. Serve hot or at room temperature.
If you use a non-Ghirardelli brand brownie mix, be sure to refer to the back of the box for the amount of water, oil and eggs needed.
