Spinach Tagliatelle

The concept of using peanuts, especially walnuts, to thicken a sauce is rooted in some of Greece’s regional Lenten traditions. It was a brilliant way for cooks to mimic the texture of, say, minced meat, during periods of fasting, and provide important nutrition. (read more on the notes below)
