My new favorite application of a fried egg! This little taco hits the spot perfectly with a cheesy and corn-speckled fried egg, refried black beans, Cotija, cilantro, pickled red onions and a spicy green salsa.

These fried egg tacos have become my obsession lately! I've made them for breakfast, lunch, dinner, and all sorts of “meals” in between.

The fried egg is just the classic fried egg with cheese skirt (which is really having a moment right now!) but we're going elote style with everything – adding some roasted corn, cotija and cilantro – and finishing with a tangle of pickled red onions and a cheerful touch of salsa verde.

There are so many sauces that would work well here, but lately I've been liking them:

  • Aji Verde: A semi-spicy green salsa with jalapeños, cilantro and garlic
  • Zhoug: A spicy herbal sauce that doesn't necessarily fall into the Mexican flavor family, but I find it really delicious (plus you can buy it ready-made at Trader Joe's)
  • Salsa Verde: Standard stuff, delicious and good

If you're short on time or not feeling the taco, eating this egg plain or over leftover rice is also a great way to live.

How to make these Roasted Corn and Fried Egg Tacos

Step 1: Arrange the cheese in a ring.

Add the grated cheese directly into a hot pan, arranging it in a ring. (I use a cast iron or nonstick skillet for this.)

Step 2: Add the egg.

Place it right in the center of your cheese ring.

Step 3: Add the corn!

Yes, corn. Fresh, frozen, cooked, raw, everything is good. I'm really into the Mexican roasted corn from Trader Joe's right now.

Add the corn to the egg and cheese.

Step 4: Tighten the edges slightly.

You don't have to do this, but I like to push the crispy edges so the egg is a little more contained.

Fold the edges to contain the egg.

Step 4: Transfer to a tortilla.

I like to have refried black beans waiting as an egg bed. Boop!

Step 6: Make it cute!

Pickled onions, cilantro and cotjia cheese are highly recommended. I also like that green, spicy zhoug on there!

  1. Heat a nonstick or cast iron skillet over medium heat. Add the cheese in the shape of a ring.
  2. When it starts to melt a little, crack an egg directly into the center.
  3. Place some toasted corn around the edge of the egg.
  4. Use a spatula to loosen the edges slightly when the cheese starts to brown; you don't have to do this, but I find it helps to contain the egg a bit and expose those golden brown lacy edges.
  5. Cover and let cook for a minute or two.
  6. When the egg is cooked to your taste (I prefer it with the egg whites whipped and the yolk still a little runny), transfer the egg to the tortilla with the refried black beans.
  7. Finish with pickled onions, cilantro, Cotija and your favorite salsa. The crispy edge of the cheese. The runny yolk. The creamy beans, the spicy sauce, the spicy onions. Oh my word. YUM.

Notes

Sauce: I love aji verde, but when needed I will simply mix a little mayo with Tajin and a little salt for an elote style sauce. And to make it super easy, choose your favorite salsa jar or hot sauce bottle!

Corn: I use frozen Mexican roasted corn from Trader Joe's that has a little flavor added, but I've also used fresh, frozen, raw, and cooked corn – this recipe isn't fussy! All roads can lead to goodness!

What can I use instead of corn?

How long do leftovers last? Can you prepare it?

Yes, it works great for meal prep as long as you have the option to fry the egg right before serving. To make ahead: Pickle the onions and make (or buy) the sauce. And then, when it's time to serve, all you have to do is fry an egg and assemble! This works great for quick meals to throw together throughout the week.

Can you make it gluten free?

If you make sure your tortillas will be gluten-free (like a corn tortilla, for example), then these are gluten-free as written!
