Perfect for peak season tomatoes and a fun way to change up your packed lunch routine!
You’ve heard of Southern tomato sandwiches. You ate thick slices of ripe tomato on a BLT. And I’m sure you’ve had an Italian caprese sandwich with tomatoes, mozzarella and basil. But have you ever had the Greek version of a tomato sandwich with sliced feta? It will quickly become your new favorite type of tomato sandwich!
What sets this sandwich apart is the garlic-infused flavor. After the bread is toasted, while it is still warm, you will drizzle it with olive oil and immediately rub the size of a cut clove of garlic on it. The flavor of the garlic infuses the oil, enhanced by the heat still emanating from the toasted bread. I make it with avocado toast and caprese sandwiches and it makes all the difference in the world!
Ingredients and substitutions
- Sliced bread – whatever your favorite is (I love Dave’s)something you can put in the toaster to heat it up (if you use pita or something similar, you’ll need to heat it in a pan instead!).
- Feta cheese – make sure you buy piece style, not crumbled. You will cut it for this recipe! (tip: buying the style in pieces and crumbling it yourself is much better than pre-crumbled, anyway!).
- Tomato – preferably a seasonal, ripe and juicy tomato. If it’s out of season, Campari tomatoes are quite tasty.
- Extra virgin olive oil
- Fresh garlic clove – you can use a sprinkle of garlic powder in a pinch, but a fresh garlic clove is preferable here.
- Dried oregano – or fresh can be used if you have it.
- Sea salt and black pepper
How to prepare a sandwich with feta and tomato
First, toast the bread. Not too toasted! Just enough to warm it up and give it a little crunch. Season the bread with olive oil as soon as it comes out of the toaster while it’s still hot. Immediately rub the cut side of a garlic clove over the oil (the heat will infuse the garlic flavor throughout!). Sprinkle with dried oregano, then place the sliced feta and tomatoes on top of a slice of bread. Sprinkle some sea salt and black pepper. Place the other piece of bread oily side down on top of the assembled sandwich and voila! Your feta and tomato sandwich is complete!
What type of bread to use
For this feta and tomato sandwich it’s easiest to use sliced bread, so you can easily toast it to warm it up and then rub the garlic clove on it.
I’m a big fan of Dave’s Bread – especially the thinly sliced version. This is a bread you can buy in the bread aisle of your grocery store. It’s full of whole grains (without tasting like cardboard!)and the ingredient list is quite healthy.
Using pita (or another type of flatbread)
As mentioned above, one of the best things about this sandwich is rubbing a cut clove of garlic on the warm toasted bread to infuse the garlic flavor throughout. This can be achieved with pita bread or focaccia (like naan or wrap)but you will have to reheat it using a different method than a toaster. You can use a hot pan to heat/toast one side of a piece of pita bread, a small wrap or naan, then proceed with the recipe by drizzling olive oil onto the heated side and rubbing garlic on it.

Ingredients
- 2 slices bread any type you want; see notes
- ½ table spoon extra virgin olive oil
- 1 clove garlic cut in half crosswise
- pinch dried oregano
- 2-3 thick slices of a large tomato
- 2-3 slices of feta cheese in pieces (about 2 ounces)
- pinch sea salt
- pinch black pepper
Instructions

Toast the 2 slices of bread in a toaster. As soon as they come out, spray the ½ tablespoon of extra virgin olive oil on both pieces. Immediately rub the cut side of one of the halves 1 clove of garlic on the covered in oil. bread. The heat from the bread will infuse the garlic flavor throughout (If you prefer, you can save the rest of the clove for another purpose!).

Sprinkle the bread with a a pinch of dried oregano. Layer the 2-3 thick slices of a large tomato and the 2-3 slices of shredded feta cheese on top of one of the slices of bread. Sprinkle with a pinch sea salt and a pinch black pepper.

Place the other piece of bread on top of the stack, oil side down. Cut in half and enjoy!
Notes
- Sliced bread that can be easily heated in the toaster is the most convenient to use here. I’m a big fan of Dave’s Thin Sliced Breadeasily found in the bread aisle of your grocery store. If you want to use pita, a tortilla, naan, or another type of flatbread, you’ll need to use something other than a toaster to heat it. I recommend toasting one side in a dry skillet, then removing it and drizzling it with oil and rubbing garlic on that heated side.
