Italians love both farmed and foraged mushrooms, and there are so many delicious ways they can be cooked and eaten. However, I would say that the most popular way is with pasta, as in these mushroom pasta recipes.
Mushrooms can be paired with meat or seafood or be the main protagonists of a recipe. You can prepare mushroom pasta with just one type of mushroom or with a mix. However, I particularly like the ones made with sautéed mushrooms. Have you ever gone mushroom hunting? It’s a popular pastime here. Although, of course, you need to know your mushrooms!

The goodness of pasta with porcini mushrooms can only be understood by those who have had the pleasure of eating it. This classic traditional dish is easy to prepare as long as you find good quality porcini mushrooms. So, it’s definitely worth going mushroom hunting (even at your local supermarket!)
12) Senatore Cappelli organic wholemeal pasta with Nduja and mushrooms
This recipe is a delicious example of how nduja (a spicy Calabrian spreadable cured meat) pairs well with different ingredients. I used pioppini and white mushrooms. But this recipe is also excellent with foraged mushrooms such as porcini.
13) Traditional White Ragout with Mushrooms
For this mushroom pasta I used what the Italians call ‘chiodini’ or ‘good family’. Chiodini mushrooms (Armillaria mellea) grow on or near deciduous trees. In English they are better known as honey mushrooms. Honey mushrooms have a slightly sweet taste and a rich umami flavor. Many people say they are better than shiitakes! Of course you can also use farmed mushrooms.
14) Homemade Cavatelli with Oyster Mushrooms and Sausage
The mushrooms usually used in this Apulian recipe are called cardoncelli (pleurotus eryngii) in Italian. These are the largest of the oyster mushroom genus. In fact, they are also called cardoncello mushrooms.
For this recipe I used other cardoncelli mushrooms because I couldn’t find cardoncelli. However, the sauce was very tasty even though these cardoncelli mushrooms had a milder flavor than cardoncelli. You could also use shiitake or even porcini or a mix of different mushrooms.
15) White lasagna with mushrooms and burrata
If you want to amaze your guests, this lasagna is the way to do it! The taste is exceptional but the ingredients are simple. I guess the most important thing is the quality of those ingredients, especially the use of fresh burrata and, if you can find them, fresh porcini mushrooms make it really special.
This dish is typically prepared with fresh cardoncelli mushrooms (cardoncelli mushrooms) or porcini mushrooms. I chose to use 3 types of mushrooms; porcini mushrooms, white champignons and pioppini mushrooms. The porcini mushrooms were frozen, not fresh.
16) Spaghetti ‘Mare e Monti’ Recipe from Le Marche
This is a classic “surf and turf” pasta recipe from the Marche region of central Italy. The Marche is a beautiful, uncontaminated region, quite mountainous and hilly, with a long coastline on the Adriatic Sea. Food in this region is greatly influenced by both the land and the sea. So, the combination of different mushrooms and calamari (squid) in this delicious pasta dish is very representative of the local cuisine.
17) Paccheri with porcini mushrooms, speck and pistachio
There are a number of wonderful pasta recipes using paccheri and porcini mushrooms. This is one of my favorites! I made it with paccheri and pistachios from Sicily, porcini mushrooms from our woods and speck from Alto Adige! All wonderful traditional Italian ingredients. This recipe can be made with dried or frozen porcini mushrooms!
18) Pasta alla Boscaiola (with sausage and mushrooms)
In Italian the word “boscaiola” means lumberjack or woodcutter. So, this boscaiola pasta recipe is traditionally based on the most popular food found in the woods, mushrooms. Most boscaiola recipes include porcini mushrooms. However, it can also be prepared with other mushrooms. I used porcini mushrooms and pioppini.

Pasta with rabbit is very traditional in many parts of Italy. This very tasty recipe comes from the Marche region in central Italy. It’s easy to make and full of flavor! Instead of porcini mushrooms you can use your favorite mushrooms.
20) Italian Ricotta Mushroom Baked Lasagna
This Italian Baked Lasagna is my favorite vegetarian baked mushroom pasta recipe. Made with the fabulous dry curly lasagna of Southern Italy and porcini mushrooms, this dish is as good as it sounds! I used frozen porcini mushrooms and fresh cremini mushrooms. However, you can use other dried or fresh mushrooms and porcini mushrooms.
