One of the most delicious soups you will ever make is this Thai Dumpling Soup. It takes just 15 minutes to assemble in total. I’ve already done this multiple times in a week, it’s so addictive and comforting.

About Thai Dumpling Soup
Thai dumpling soup is my latest obsession. It is also known as Thai red curry soup or red curry soup, prepared with red curry paste, coconut milk, vegetables, tofu and dumplings. For this recipe I used store bought dumplings, also known as momos. But you can also do it at home.
For this recipe I used vegetarian red curry paste, you can use homemade or store bought. I like to cook the red curry paste with coconut milk until the oil separates from the mixture which gives an intense flavor to the soup base. Chicken broth can be used instead of vegetable broth. Check out this broccoli cream too.
You can add any vegetables and proteins to the soup. You can use bok choy, bamboo shoots, baby corn, spinach or broccoli. Proteins such as tofu, shrimp and chicken can be used in the soup.

Ingredients for dumpling soup
Red Curry Paste – You can use the red curry paste available in tubs in the refrigerator section for a fresh taste. You can use any favorite brand of curry paste. You can also make your own red curry paste, recipe below
Coconut milk – use fresh, thick coconut milk to cook along with the red curry paste. It adds flavor and makes the curry so tasty.
Vegetables and proteins – In this recipe I used cabbage, carrots and mushrooms. You can use bok choy, bamboo shoots, baby corn, spinach or broccoli. Proteins such as tofu, shrimp and chicken can be used in the soup.
Condiments – I used soy sauce, vinegar and jaggery as seasoning for the soup.
Action – I used vegetable broth as a base for the soup, you can use water or chicken broth.
Gnocchi – For this recipe I used store-bought dumplings, also known as momos. But you can also do it at home.
Homemade Red Curry Paste Recipe
- Onion – ½ sliced
- Shallot(sambar onion) – ½ cup
- Dried red chillies – 10
- 1 inch piece of ginger
- Garlic-10 cloves
- Coriander seeds (hulls)-1 tbsp
- Cumin seeds(jeera)-1 tsp
- Cilantro stems: ½ cup
- Kaffir Lime Peel (Narthankai) -3 peels
- Salt -1 tsp
- Oil-3 tbsp
- Water as needed
Take all the ingredients in the blender and reduce them to a coarse puree.
How to Make Thai Dumpling Soup (Step by Step Pictures)
1) Heat the oil in a pan, add the red curry paste and fry for 2 to 3 minutes.
2) Now pour in the coconut milk and mix well with the red curry paste until well combined.
3) Cook over medium heat until the oil separates from the mixture.
4)Add the brown sugar.
5)Add the vinegar. All these ingredients are to be enjoyed.
6)Add the soy sauce.
7) Mix very well.
8) Pour in the vegetable broth and mix well. Bring it to a full boil.
9)Now add carrots, cabbage, mushrooms, tofu and mix well.
10) Cover and leave to cook for 5 minutes.
11)While the vegetables are cooking, fry the momos. Heat 1 tablespoon of oil in a pan. Place frozen momos or dumplings in the pan. Pour in the water and cover the pan with a lid.
12)Cook over medium-low heat for 3-4 minutes until the bottom is crispy and the gnocchi are cooked.
13)Now add the glass noodles into the broth.
14) Dip the tagliatelle in the broth. It will be cooked in a few minutes.
15)Place the momos on the broth.
16) Sprinkle with coriander leaves. Serve hot.
