This vegan Italian dressing is hands down our new favorite salad dressing! It’s perfectly balanced with fresh ingredients and tastes absolutely delicious.
We used simple, fresh ingredients that bring out the flavors of this salad dressing. You get the richness from the olive oil, the “cheesy flavor” from the nutritional yeast and Dijon mustard. While the vinegar, lemon juice and maple syrup create the perfect balance between sweet and tangy. Add your fresh herbs and garlic and you have the perfect salad dressing!

How to make vegan Italian dressing

- Place the olive oil, white wine vinegar, lemon juice, maple syrup, Dijon mustard, sea salt, black pepper, and nutritional yeast in a small bowl or measuring cup .
- Whisk together until emulsified.
- Add the crushed garlic and all the fresh herbs to the mixture.
- Beat gently until well combined. Do not whisk vigorously otherwise you risk liquefying the herbs.
- Enjoy your vegan Italian dressing!
Fresh herbs vs dried herbs
We tested this recipe with both fresh and dried herbs and the fresh herbs won by a long shot! We have found that the flavors of the dressing are elevated when using fresh herbs.
However, you can replace the fresh herbs with 1 teaspoon of dried herbs if you don’t have fresh ones on hand.
Storage Tips
Store leftovers in an airtight container, such as a glass jar, in the refrigerator where it will stay good for up to 5 days.
Not ideal for freezing.
