And we’re here to show you how easy it is to make one of the latest kitchen trends. Introducing… Upside down puff pastries with salmon and cream cheese!

Quick and simple, these delicious little squares are a testament to pure simplicity. No elaborate preparations or advanced skills are needed: just roll out the dough, layer the toppings, fill, flip and bake! With just a handful of ingredients and just 10 minutes of prep time, this dish practically prepares itself, leaving you plenty of time to tackle your to-do list (or indulge in a little extra social scrolling).

While the pastries bake, be sure to call your family into the kitchen to watch them puff up to a gorgeous golden brown. Otherwise, they may not believe that these bakery-quality morsels were made in house!

  • 1 sheet of frozen puff pastry, thawed and cut 6 also rectangles
  • 5 oz herbed cream cheese
  • 3 tbsp plain greek yogurt
  • 1 Teaspoon olive oil
  • Ā½ tsp balsamic vinegar
  • Ā½ tsp kosher salt
  • Ā½ tsp Freshly ground black pepper
  • 2 tbsp fresh chives or dill, chopped
  • 1 sweet onion, peeled and sliced 12 thin rings (approx Ā¼-inches thick)
  • 8 oz smoked salmon, sliced
  • 1 egg, beaten with a drop of water
  • Capers for garnish (optional)

  1. Preheat oven to 375 degrees F. Place Silpat mat or parchment paper on baking sheet.
  2. In a small bowl, combine cream cheese and yogurt; mix until you obtain a cream; set aside.
  3. Spray a drizzle of olive oil in 6 places on the pan where you will place the sheets (leave a little space between the spaces). Lightly drizzle a little balsamic vinegar over the olive oil, then sprinkle with salt, pepper, and fresh chives or dill.
  4. Then place two onion slices on top of the seasoned oil and vinegar mixture (try to place the slices next to each other but not on top of each other, but they will fit under the puff pastry). Cover the onion slices with the smoked salmon slices, arranging them in a thin layer.
  5. Next, spread 2 tablespoons of the cream cheese-yogurt mixture in the center of the puff pastry sheet creating a 2-inch circle. Flip and place the smoked salmon stacks on top, so that the cream cheese covers all the smoked salmon stacks. Repeat the operation with the remaining 5 sheets of puff pastry. Using a fork, press the edges of each tart onto the baking sheet, making indentations around the edges of the pastry.
  6. Lightly brush each tart with the beaten egg and bake for 20 minutes. If the puff pastry is not golden and puffy, return to the oven and bake for another 3 to 5 minutes, watching carefully to make sure the puff pastry cooks on the bottom but does not burn on the top.
  7. When the puff pastry is golden and soft, remove it from the oven and leave it to cool on the baking tray for 5 minutes. Turn them gently with a spatula. (You may need to run a knife underneath to loosen it.) Place on serving platter, garnish with capers (if desired), and enjoy while hot.
