Baked chicken with French onion

Chicken topped with sweet caramelized onions and cheese cooked until the cheese is melted!
ingredients
- 2 tablespoons butter (or oil)
- 2 pounds onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 teaspoon chopped thyme (or 1/4 teaspoon dried thyme)
- 1 pound boneless, skinless chicken breasts (or thighs)
- salt and pepper to taste
- 1 cup Gruyere cheese, grated (or mozzarella)
- 1 cup chicken broth (optional)
directions
- Melt the butter in a skillet over medium heat, add the onions and cook until golden, about an hour, stirring often, adding a little water (or broth) to deglaze the pan as needed.
- Add the garlic and thyme and cook for another minute, stirring.
- Place the chicken on a baking tray, season with salt and pepper to taste, divide the caramelized onions between the chicken, sprinkle the cheese and pour the broth into the bottom of the pan.
- Bake in preheated 350°F/180°C oven until cheese is melted and chicken is cooked through, about 25-35 minutes.
Option: At the end of cooking, add a teaspoon of Worcestershire sauce to the caramelized onions.
Option: Add 1 chopped chipotle pepper in adobo sauce to the caramelized onions along with the garlic and thyme for some smoky heat!
Option: Use a different type of processed cheese, like mozzarella!
Tip: To be enjoyed with croutons to soak up the broth!
