Baked chicken with French onion

Chicken topped with sweet caramelized onions and cheese cooked until the cheese is melted!

ingredients
  • 2 tablespoons butter (or oil)
  • 2 pounds onions, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon chopped thyme (or 1/4 teaspoon dried thyme)
  • 1 pound boneless, skinless chicken breasts (or thighs)
  • salt and pepper to taste
  • 1 cup Gruyere cheese, grated (or mozzarella)
  • 1 cup chicken broth (optional)
directions
  1. Melt the butter in a skillet over medium heat, add the onions and cook until golden, about an hour, stirring often, adding a little water (or broth) to deglaze the pan as needed.
  2. Add the garlic and thyme and cook for another minute, stirring.
  3. Place the chicken on a baking tray, season with salt and pepper to taste, divide the caramelized onions between the chicken, sprinkle the cheese and pour the broth into the bottom of the pan.
  4. Bake in preheated 350°F/180°C oven until cheese is melted and chicken is cooked through, about 25-35 minutes.

Option: At the end of cooking, add a teaspoon of Worcestershire sauce to the caramelized onions.
Option: Add 1 chopped chipotle pepper in adobo sauce to the caramelized onions along with the garlic and thyme for some smoky heat!
Option: Use a different type of processed cheese, like mozzarella!
Tip: To be enjoyed with croutons to soak up the broth!
