SOFT HONEY BISCUITS gluten-free: Recipe by Rice Powder

Light, delicate, naturally sweet thanks to honey. Crispy on the surface thanks to the grain of brown sugar, they are also perfect for a snack or for sudden sweet cravings.
Try them in the morning, soaked in a cup of milk, vegetable or otherwise, depending on your personal tastes and you won’t want to stop eating them, because one soft honey biscuit leads to another.

INGREDIENTS for gluten-free SOFT HONEY BISCUITS (dose for 15 soft biscuits):
1 medium egg
100 g of butter (lactose-free for those who are intolerant) at room temperature
60 g of honey
100 g of rice flour
50 g of chestnut flour
1 pinch of bicarbonate
Brown sugar to taste
HOW TO PREPARE SOFT GLUTEN-FREE HONEY BISCUITS:
- 1. First, place the egg, honey and butter at room temperature in a bowl and mix with the help of a whisk.
- 2. Then add the rice flour, the chestnut flour, the pinch of bicarbonate and mix well.
- 3. With hands moistened with water, form about 15 balls with the dough obtained (the dough must be soft).
- 4. Place the balls obtained on the baking tray, covered with baking paper.
- 5. With the water-wet tines of the fork, shape the biscuit, crushing the dough balls.
- 6. Add the grain of brown sugar to the surface.
- 7. Bring the soft honey biscuits to cook in a static oven, preheated to 170° for about 10 minutes (cooking times may vary depending on your oven).
- 8. Remove the soft biscuits from the oven, let them cool and store them in an airtight tin box for a week.
